I like celery in stir fry’s!

Marinade & pork:

  • lb pork cutlets, cut into 2-in strips
  • pinch of salt
  • pinch of white pepper
  • 1egg
  • 1TBS canola oil
  • 2-3TBS corn starch

For the stir-fry:

  • 4-5medium ribs celery, sliced into batons (approx. 4 cups)
  • 1heaping tsp garlic, minced
  • 1heaping tsp ginger, minced
  • 1carrot, cut into battonetes
  • 3green onions, cut into 2-inch lengths
  • 4TBS Shaoxing rice wine
  • 1TBS sesame oil
  • pinch white pepper
  • ½TBS soy sauce
  • 2TBS oyster sauce
  • cilantro sprigs


Pork:

Slice pork into thin ¼-inch strips, then cut strips into ¼-inch batons. Place in bowl. Season with salt and pepper. Mix.
Add in egg and mix.
Add 2 TBS corn starch and mix to coat. Add more if needed to coat.
Add about ½ TBS oil and mix.
Heat pan and add enough oil to cover bottom of pan.
Add pork and stir fry, stirring to separate so they aren’t stuck together. Remove to bowl.
Add another TBS oil, ginger and garlic, green onion and carrot. Add celery and stir to combine.
Add 4 TBS Shaoxing wine, 1 TBS sesame oil and a small pinch of white pepper. Mix and add ½ TBS soy sauce and 2 TBS oyster sauce. Mix.
Add cooked pork. Mix well. Mix in some cilantro sprigs and serve.

Pork Cutlets with Baby Potatoes & Asparagus

Pork Cutlets with Baby Potatoes & Asparagus

A sheet pan meal. This looks good.

  • ¼cup olive oil, divided
  • 3cups diced new potatoes
  • 3cups cut fresh asparagus (1-inch pieces)
  • ¼tsp salt
  • ¼tsp pepper
  • 1large gala or Honeycrisp apple, peeled and cut into 1-inch wedges
  • 2tsp brown sugar
  • 1tsp ground cinnamon
  • ¼tsp ground ginger
  • 4boneless pork loin chops (1 inch thick and about 6 oz each)
  • 2tsp Southwest seasoning

Preheat oven to 425°F. Line a half-sheet pan with foil, brush with 2 tsp olive oil.

In a large bowl, toss potatoes with 1 TBS olive oil. Place in 1 section of prepared half-sheet pan. In same bowl, toss asparagus with 1 TBS olive oil, place in another section of pan. Sprinkle salt and pepper over potatoes and asparagus.

In same bowl, toss apple with 1 tsp olive oil. In a small bowl, mix brown sugar, cinnamon and ginger, sprinkle over apples and toss to coat. Transfer to a different section of pan.

Brush pork chops with remaining olive oil, sprinkle both sides with Southwest seasoning. Place chops in remaining section of pan. Bake until a thermometer inserted in pork reads 145° and potatoes and apples are tender, 20-25 minutes. Let stand 5 minutes before serving.

with Garlicky Brussels Sprout & Onion Jumble

Pork cutlets are coated in rosemary and garlic, and then seared to perfection. You’ll spoon a buttery, sweet, and tangy balsamic-apricot pan sauce over the top just before serving. The sides are just as satisfying—roasted, caramelized onion wedges and Brussels sprouts.

  • 8oz Brussels sprouts
  • 1tsp garlic powder
  • 1oz apricot jam
  • 1onion garlic
  • 10oz pork chops
  • 1tsp dried rosemary
  • 5tsp balsamic vinegar
  • 1oz chicken stock concentrate
  • salt & pepper
  • 1tsp sugar
  • 1TBS cooking oil
  • 1TBS butter

Prep:

Adjust rack to top position and preheat oven to 425°F. Wash and dry produce.

Trim and halve Brussels sprouts lengthwise. Halve, peel, and slice onion into 1-inch-thick wedges, mince a few slices until you have 1 TBS. Peel and mince or grate garlic.

Roast veggies:

Toss Brussels sprouts and onion wedges on a baking sheet with a drizzle of oil, half the garlic powder (you’ll use the rest in the next step), salt, and pepper. Roast on top rack until golden-brown and tender, 15-20 minutes.

Prep pork:

Meanwhile, pat pork dry with paper towels and season all over with rosemary, remaining garlic powder, salt, and pepper.

Cook pork:

Heat a drizzle of oil in a large pan over medium-high heat. Add pork and cook until browned and cooked through, 4- to 6-minutes per side.

Tip: Lower heat if pork begins to brown too quickly.

Turn off heat, transfer pork to a cutting board and cover with foil. Wipe out pan and let cool slightly.

Make sauce:

Heat a drizzle of oil in pan used for pork over medium-low heat. Add minced onion and cook, stirring occasionally, until softened, 2- to 3-minutes. Add minced garlic, cook, stirring, until fragrant, 30 seconds. Stir in jam and vinegar, cook until syrupy, 30-60 seconds.

Stir in ¼ cup water, stock concentrate, and 1 tsp sugar, cook until thickened, 3- to 4-minutes. Remove from heat. Stir in 1 TBS butter until melted. Season with salt and pepper.

Finish & serve:

Slice pork crosswise.

Divide pork and Brussels sprout and onion jumble between plates. Spoon sauce over pork and serve.

Miso Peach Pork Chops

with Ginger Rice & Green Beans

In less than 5 minutes a delicious pan sauce with aromatic fresh ginger and garlic, umami-packed miso sauce concentrate, and sweet peach jam. It’s drizzled all over seared pork chops, then served with fluffy rice and tender green beans.
Prep: 10 Cook: 30

  • 1thumb ginger
  • 10oz pork chops
  • 1oz peach jam
  • 1clove garlic
  • 1lemon
  • 6oz green beans
  • ½cup jasmine rice
  • 1oz miso sauce concentrate
  • salt & pepper
  • 4tsp cooking oil
  • 2TBS butter

Prep:

Adjust rack to top position and preheat oven to 450°F. Wash and dry produce.

Peel and mince ginger. Trim green beans if necessary. Peel and mince garlic. Zest and quarter lemon.

Cook rice:

Heat a drizzle of oil in a small pot over medium-high heat. Add half the ginger and cook until fragrant, 30 seconds.

Stir in rice, ¾ cup water, and a big pinch of salt. Bring to a boil, then cover and reduce to a low simmer. Cook until rice is tender, 15-18 minutes.

Keep covered off heat until ready to serve.

Cook pork:

Pat pork dry with paper towels and season all over with salt and pepper.

Heat a drizzle of oil in a large pan over medium-high heat. Add pork and cook until browned and cooked through, 4- to 6-minutes per side.

Turn off heat, transfer pork to a plate. Wipe out pan.

Roast green beans:

While pork cooks, toss green beans on a baking sheet with a drizzle of oil, salt, and pepper.

Roast on top rack until browned and tender, 10-12 minutes.

Make sauce:

Return pan used for pork to medium heat. Add a drizzle of oil, garlic, and remaining ginger. Cook, stirring, until fragrant, 30 seconds.

Add ¼ cup water, jam, and miso sauce concentrate. Cook, stirring, until thickened, 3- to 4-minutes.

Remove pan from heat and stir in 2 TBS butter until melted. Stir in a squeeze of lemon juice to taste.

Finish & serve:

Fluff rice with a fork, stir in lemon zest and a pinch of salt if necessary.

Divide rice, pork, and green beans between plates. Drizzle pork with sauce and serve with any remaining lemon wedges on the side.

with Rosemary Brown Butter Veggies & Roasted Potatoes

PARSNIPS – This cousin of the carrot has a sweet, nutty flavor.
To make it easier to check your brown butter in Step 5, use a light-color pan or scoop up the butter with a metal spoon so you can see its color.

  • 12oz potatoes
  • 6oz parsnips
  • 6oz carrots
  • 1shallot
  • ¼oz rosemary
  • 10oz pork chops
  • 1TBS fry seasoning
  • 2oz chicken stock concentrates
  • 1tsp dried thyme
  • 1TBS flour
  • 2TBS cream cheese
  • salt & pepper
  • 4tsp cooking oil
  • 3TBS butter

Prep:

Adjust rack to top position and preheat oven to 450°F. Wash and dry produce.

Trim, peel, and cut parsnips on a diagonal into ½-inch-thick pieces. Trim, peel, and cut carrots on a diagonal into ½-inch-thick pieces. Slice potatoes into ¼-inch-thick rounds. Halve, peel, and mince half the shallot. Strip rosemary leaves from stems, finely chop leaves until you have ½ tsp.

Tip: If you have any extra rosemary sprigs, save them for an easy garnish!

Roast veggies:

Toss parsnips and carrots on one side of a baking sheet with a drizzle of oil, salt, and pepper.

Toss potatoes on empty side with a drizzle of oil, salt, and pepper.

Roast on top rack until golden-brown and tender, 20-25 minutes.

Cook pork:

Pat pork dry with paper towels and season all over with Fry Seasoning, ½ tsp thyme, salt, and pepper.

Heat a drizzle of oil in a large pan over medium-high heat. Add pork and cook until browned and cooked through, 4- to 6-minutes per side. Turn off heat, transfer to a cutting board to rest. Wipe out pan.

Make gravy:

In the same pan, melt 1 TBS butter over medium heat. Add minced shallot and cook, stirring, until softened and fragrant, 2- to 3-minutes. Add a drizzle of oil, flour, and a pinch of thyme, cook, stirring, until lightly browned, 2- to 3-minutes.

Whisk in 1 cup water, stock concentrates, and ¼ tsp salt. Bring to a simmer, whisking constantly, until thickened, 3- to 5-minutes.

Remove from heat, stir in cream cheese until thoroughly combined. Season with salt and pepper to taste.

Brown butter:

Melt 2 TBSP butter in a medium pan over medium-high heat. Cook, stirring frequently, until butter is foamy and flecked with amber brown bits, 1- to 2-minutes.

Remove from heat and stir in rosemary. Carefully transfer rosemary brown butter to a medium bowl.

Finish & serve:

Slice pork crosswise.

Add carrots and parsnips to bowl with rosemary brown butter, toss to coat.

Divide pork, carrots and parsnips, and potatoes between plates. Spoon gravy over pork and serve.

Pork Cutlets, Parmesan-Crusted

Panko breadcrumbs give cutlets the crispiest exterior and the meat is lightly pounded just thin enough to let all that crispy breading shine without losing the structure of the chop.
The thing that makes this cutlet particularly good? The addition of finely grated Parmesan cheese gives the pork chop tons of delicious savory flavor, with all the crispiness you crave from a cutlet.

  • 2oz Parmesan cheese
  • 1cup panko bread crumbs
  • 2large eggs
  • tsp kosher salt, divided, plus more for seasoning
  • 4(½-inch thick) center-cut boneless pork loin chops (about 1 lb total)
  • ½tsp freshly ground black pepper
  • ½cup plus 2 TBS olive oil, divided


Prep:

Finely grate 2 oz Parmesan cheese (about 1½ packed cups). Transfer ½ cup to a shallow bowl. Add 1 cup panko and stir to combine. Place the remaining Parmesan in a second shallow bowl. In a third shallow bowl, whisk together 2 large eggs and ¼ tsp of the salt until broken up with no streaks of egg whites.

Pat four boneless pork chops dry with paper towels. Working with one pork chop at a time, place in between two sheets of plastic wrap or large zip-top bag and pound with a rolling pin or the flat side of a meat mallet until ¼-inch thick. Season the pork with the remaining 1½ tsp salt and ½ tsp black pepper.

Working with one pork chop at a time, dredge to completely coat in the Parmesan, then the eggs, and finally the bread crumb mixture, gently pressing the bread crumbs into the pork to adhere. Place on a large plate or baking sheet.

Fry:
Place enough olive oil in a large skillet to come half way up the cutlets. Heat over medium-high heat until shimmering. Add two of the breaded pork cutlets and fry until cooked through and lightly browned on both sides, 2 to 4 minutes per side. Transfer to a paper towel-lined plate or wire rack. Season with salt. Add additional olive oil to the pan and fry the remaining pork chops.

Serve with buttered noodles and your choice of vegetable.

Onions, Mushrooms, and Zucchini

Say some nice stuff about the recipe Jed. Well, I had an urge for a new pork cutlet dish, and it seemed something like a Swiss’ed Steak would be good. I tested this theory and it needed work. The pork was really dry. This version uses the same sauce but the cutlets are sauteed first and then added just to the sauce at the finish.

  • 46-oz boneless pork cutlets
  • salt & pepper
  • 1-2TBS olive oil
  • 8oz mushrooms, sliced
  • 1medium onion, sliced
  • 1-2tsp garlic, minced
  • 15oz can diced tomatoes
  • ¼-½cup water
  • 1TBS Better than Bouillon, chicken (BTB)
  • 1tsp dried oregano,
  • 1tsp dried basil

Options:

  • 1-2zucchini, sliced ½-inch thick on the diagonal

Pat dry and season cutlets on both sides with salt and pepper.

Heat olive oil in a large skillet until shimmering.

Add cutlets and cook until just brown, about 2 to 4 minutes per side, until they reach 140°F. Remove to dish, cover loosely and set aside.

Add a little more oil if needed and sauté mushrooms and onions until mushrooms are nicely browned and onions soften. At the end, add garlic and sauté for 30 seconds to remove raw flavor.

To the skillet with onions and mushrooms add diced tomatoes, water, BTB, oregano and basil. Mix well. Bring to a boil and reduce to simmer. If using, season and add the zucchini to the skillet for 10 to 12 minutes. Taste and adjust seasoning.

Return cutlets to skillet and spoon sauce over cutlets. Simmer for a couple of minutes to reheat cutlets.

Serve with pasta or potatoes.
