Here, plenty of lemon and garlic, are used to marinated boneless chicken thighs.<br \/>\nOptimum marinating time here is 8 hours. But feel free to leave it for as little as 15 minutes or as long as 24 hours. If you would rather use white meat, substitute boneless skinless breasts but reduce the cooking time by a few minutes.<\/p>\n<ul>\n<li><span class=\"quantity\">6<\/span><span class=\"ingredient-name\">boneless skinless chicken thighs (about 1\u00be lb)<\/span><\/li>\n<li><span class=\"quantity\">6<\/span><span class=\"ingredient-name\">garlic cloves, grated on a Microplane or minced<\/span><\/li>\n<li><span class=\"id-ingredient-name\">juice and zest of 2 lemons<\/span><\/li>\n<li><span class=\"quantity\">3<\/span><span class=\"ingredient-name\">TBS extra-virgin olive oil, more for serving<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">TBS minced fresh parsley, more for serving<\/span><\/li>\n<li><span class=\"quantity\">1-2<\/span><span class=\"ingredient-name\">TBS za\u2019atar<\/span><\/li>\n<li><span class=\"quantity\">1\u00bd<\/span><span class=\"ingredient-name\">tsp kosher salt, more as needed<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">TBS sesame seeds, more for garnish (optional)<\/span><\/li>\n<li><span class=\"quantity\">\u2154<\/span><span class=\"ingredient-name\">cup plain Greek yogurt, preferably whole milk yogurt<\/span><\/li>\n<li><span class=\"quantity\">\u00bc<\/span><span class=\"ingredient-name\">tsp ground black pepper<\/span><\/li>\n<\/ul>\n<p><strong><br \/>\nMarinate:<\/strong><\/p>\n<p>Combine <strong>chicken<\/strong> with all but 1 tsp of the <strong>grated garlic<\/strong> (save that tsp for the <strong>yogurt sauce),<\/strong> the <strong>zest<\/strong> and <strong>juice<\/strong> of 1 <strong>lemon, oil, parsley, za\u2019atar,<\/strong> 1\u00bd tsp <strong>salt,<\/strong> and the <strong>sesame seeds.<\/strong> Cover and marinate for 15 to 30 minutes at room temperature; you can refrigerate it for up to 24 hours.<\/p>\n<p><strong>Grill\/Broil:<\/strong><\/p>\n<p>Heat grill or broiler. If grilling, cook <strong>chicken<\/strong> over high heat until charred in spots, 4 to 7 minutes. Flip pieces and continue <strong>grilling<\/strong> until just cooked through, another 4 to 7 minutes. If <strong>broiling,<\/strong> arrange a rack 3 to 4 inches from flame. Line a rimmed baking sheet with foil and spread <strong>chicken<\/strong> out in a single layer. Broil <strong>chicken,<\/strong> turning halfway through cooking, until well colored and charred in spots, 4 to 7 minutes per side. Be careful that it doesn\u2019t burn.<\/p>\n<p><strong>Make dipping sauce:<\/strong><\/p>\n<p>While <strong>chicken<\/strong> cooks, place <strong>yogurt<\/strong> in a small bowl.
