{"id":11387,"date":"2021-08-21T18:23:15","date_gmt":"2021-08-21T18:23:15","guid":{"rendered":"https:\/\/nowellfamily.org\/cookbook\/?p=11387"},"modified":"2021-08-21T18:23:15","modified_gmt":"2021-08-21T18:23:15","slug":"chicken-korma","status":"publish","type":"post","link":"https:\/\/nowellfamily.org\/cookbook\/2021\/08\/21\/chicken-korma\/","title":{"rendered":"Chicken Korma"},"content":{"rendered":"<h5 style=\"text-align: center;\">Yield: 2 Servings<\/h5>\n<h5 style=\"text-align: center;\">BBC<\/h5>\n<p>Leave the curry to stand for 30 minutes before reheating if you have time \u2013 it helps the aromatic flavors develop.<\/p>\n<p><strong>For the chicken<\/strong><\/p>\n<ul>\n<li><span class=\"quantity\">4<\/span><span class=\"ingredient-name\">boneless, skinless chicken thighs, trimmed of excess fat and quartered<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">tsp ground turmeric<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">TBS lime or lemon juice<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">tsp rapeseed or sunflower oil<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">tsp fine sea salt<\/span><\/li>\n<\/ul>\n<p><strong>For the sauce<\/strong><\/p>\n<ul>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">TBS sunflower oil or 1 TBS ghee<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp cumin seeds<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">medium onion, very finely chopped<\/span><\/li>\n<li><span class=\"quantity\">4<\/span><span class=\"ingredient-name\">garlic cloves, finely chopped<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">tsp finely grated fresh root ginger<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">14 oz can chopped tomatoes, blended until smooth (alternatively use passata)<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp tomato pur\u00e9e<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp ground turmeric<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">heaped tsp garam masala<\/span><\/li>\n<li><span class=\"quantity\">\u00bc<\/span><span class=\"ingredient-name\">tsp hot chili powder<\/span><\/li>\n<li><span class=\"quantity\">2\u00be<\/span><span class=\"ingredient-name\">oz ground almonds<\/span><\/li>\n<li><span class=\"quantity\">8<\/span><span class=\"ingredient-name\">oz full-fat milk<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">tsp coarsely ground black pepper<\/span><\/li>\n<li><span class=\"id-ingredient-name\">freshly cooked rice and fresh coriander, to serve<\/span><\/li>\n<\/ul>\n<p>Put the chicken thighs in a bowl with the turmeric, lime or lemon juice, oil and salt. Toss together well and set aside for 10 minutes.<\/p>\n<p>To make the sauce, heat the oil or ghee in a saucepan and add the cumin seeds. Once they start to sizzle, add the chopped onion, garlic and ginger and cook gently for 5\u20136 minutes over a low heat, or until well softened, stirring regularly.<\/p>\n<p>Tip the tomatoes and tomato pur\u00e9e into the pan and cook for another 2 minutes, stirring. Next, stir in the turmeric, garam masala, chili powder, black pepper and a tsp of salt. Add the ground almonds and milk and cook on a low heat for 10 minutes, or until thickened, stirring regularly.<\/p>\n<p>While the sauce is cooking, heat a griddle pan or heavy-based frying pan. Cook the chicken pieces for 8\u201310 minutes, or until lightly browned and cooked through, turning occasionally.<\/p>\n<p>Add the chicken to the sauce, cover loosely and simmer gently together for 5\u20136 minutes, stirring regularly. It\u2019s important to cover the pan as the sauce will splatter a little as it cooks. If it becomes too thick, add a splash of water. If you have time, leave the curry to stand for 30 minutes before serving, then reheat gently.
