The coffee adds an interesting character to this cake.<\/p>\n<ul>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">cups sugar (<strong>HA:<\/strong> 1\u00be cups)<\/span><\/li>\n<li><span class=\"quantity\">1\u00be<\/span><span class=\"ingredient-name\">cups all-purpose flour<\/span><\/li>\n<li><span class=\"quantity\">\u00be<\/span><span class=\"ingredient-name\">cup HERSHEY&#8217;S Cocoa<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">tsp baking soda (<strong>HA:<\/strong> 1\u00bd tsp)<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp baking powder<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp salt<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">eggs<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">cup buttermilk** or sour milk* (<strong>HA:<\/strong> 1\u00bc<\/span> cups)<\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">cup strong black coffee OR 2 teaspoons powdered instant coffee plus 1 cup boiling water<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">cup vegetable oil<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp vanilla extract<\/span><\/li>\n<\/ul>\n<p><strong><br \/>\nHeat<\/strong> oven to 350\u00b0F. <strong>Grease<\/strong> and <strong>flour<\/strong> 12-cup fluted tube pan, two 8- or 9-inch round baking pans or one 13x9x2-inch baking pan.<\/p>\n<p>Stir together <strong>sugar, flour, cocoa, baking soda, baking powder<\/strong> and <strong>salt<\/strong> in large bowl. Add <strong>eggs, buttermilk, coffee, oil<\/strong> and <strong>vanilla;<\/strong> beat on medium speed of mixer 2 minutes <strong>(Batter<\/strong> will be thin). Pour <strong>batter<\/strong> evenly into prepared pan.<\/p>\n<p><strong>Bake:<\/strong><\/p>\n<p>50 to 55 minutes for fluted tube pan,<\/p>\n<p>30 to 35 minutes for 9&#8243; round pans,<\/p>\n<p>35 to 40 minutes for 8&#8243; round pans,<\/p>\n<p>35 to 40 minutes for rectangular pan<\/p>\n<p>or until wooden pick inserted in center comes out clean. Cool 10 minutes. Loosen <strong>cake<\/strong> from side of pan and remove from pans to wire racks. Cool completely. <strong>Frost<\/strong> as desired. Makes 12 servings.<\/p>\n<p><strong>* To sour milk:<\/strong> Use 1 tablespoon <strong>white vinegar<\/strong> plus <strong>milk<\/strong> to equal 1 cup.<\/p>\n<p><strong>** Saco Buttermilk powder:<\/strong><\/p>\n<p>Add \u00bc cup of <strong>powder<\/strong> to the <strong>dry ingredients<\/strong> and 1 cup of <strong>water<\/strong> to the <strong>liquid ingredients.<\/strong><\/p>\n<p>(<strong>HA:<\/strong> \u00bc cup plus 2 TBS of <strong>powder<\/strong> to the dry ingredients and 1\u00bc cup of <strong>water<\/strong> to the liquid ingredients.)<\/p>\n<h4 style=\"text-align: center;\">Quick Vanilla Buttercream Frosting<\/h4>\n<h6 style=\"text-align: center;\">Betty Crocker<\/h6>\n<p>My granddaughter says this isn&#8217;t enough <strong>frosting<\/strong> for a layer cake doing a crumb coat, the middle, top and sides. She also made many colored rosettes for the top. Some <strong>powdered sugar<\/strong> comes from <strong>beets<\/strong> and can make the <strong>frosting<\/strong> grainy.<\/p>\n<ul>\n<li><span class=\"quantity\">4<\/span><span class=\"ingredient-name\">cups powdered &#8220;cane&#8221; sugar<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">cup butter (2 sticks), softened<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">tsp vanilla<\/span><\/li>\n<li><span class=\"quantity\">2 to 4<\/span><span class=\"ingredient-name\">TBS milk<\/span><\/li>\n<\/ul>\n<p>In medium bowl, mix <strong>powdered sugar<\/strong> and <strong>butter<\/strong> with spoon or electric mixer on low speed. Stir in <strong>vanilla<\/strong> and 2 TBS of <strong>milk.<\/strong><\/p>\n<p>Gradually beat in just enough remaining <strong>milk<\/strong> to make <strong>frosting<\/strong> smooth and spreadable. If <strong>frosting<\/strong> is too thick, beat in more <strong>milk,<\/strong> a few drops at a time.
