This has a decent heat level (too hot for Gayle) without any hot sauce, possibly due to the <strong><span style=\"color: #ff0000;\">Creole seasoning<\/span><\/strong>. I used Tony Chachere&#8217;s. Just opening the can made my eyes water and I sneezed twice. You can change or remove any of the proteins, although the Andouille is very traditional. Some calamari would be a nice addition.<\/p>\n<p><strong>Next time:<\/strong> There is too much liquid for the rice. Increase the rice to 1\u00bd cups . Also might be worth setting the cooked meat aside before adding the veg., then returning when the rice is added.<\/p>\n<p><strong>Chicken &amp; Marinade<\/strong><\/p>\n<ul>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">TBS <span style=\"color: #ff0000;\"><strong>Creole seasoning<\/strong><\/span>, divided<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">lb chicken breast, cut into bite-sized pieces<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">lb <strong><span style=\"color: #ff0000;\">Andouille sausage<\/span><\/strong>, sliced in \u00bc inch slices<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">TBS butter<\/span><\/li>\n<li><span class=\"quantity\">8-12<\/span><span class=\"ingredient-name\">oz medium raw shrimp, deveined (optional: tails removed)<\/span><\/li>\n<li><span class=\"quantity\">8<\/span><span class=\"ingredient-name\">oz raw calamari (optional)<br \/>\n<\/span><\/li>\n<\/ul>\n<p><strong>Vegetables<\/strong><\/p>\n<ul>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">yellow onion, chopped<\/span><\/li>\n<li><span class=\"quantity\">3<\/span><span class=\"ingredient-name\">cloves garlic, minced<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">green bell pepper, diced<\/span><\/li>\n<li><span class=\"quantity\">1-2<\/span><span class=\"ingredient-name\">stalks celery, diced<\/span><\/li>\n<\/ul>\n<p><strong>Jambalaya<\/strong><\/p>\n<ul>\n<li><span class=\"quantity\">1\u00bd<\/span><span class=\"ingredient-name\">cups (or more) white long grain rice<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">(14.5 oz) can diced tomatoes<\/span><\/li>\n<li><span class=\"quantity\">0-2<\/span><span class=\"ingredient-name\">tsp <span style=\"color: #ff0000;\"><strong>hot sauce<\/strong><\/span> (optional)<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp Worcestershire sauce<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">cups chicken broth<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">bay leaves<\/span><\/li>\n<li><span class=\"quantity\">\u00be<\/span><span class=\"ingredient-name\">tsp salt<\/span><\/li>\n<li><span class=\"quantity\">4<\/span><span class=\"ingredient-name\">green onions, thinly sliced<\/span><\/li>\n<\/ul>\n<p><strong>Marinate Chicken: <\/strong>Place the <strong>chicken<\/strong> in a bowl with 1 TBS of the <span style=\"color: #ff0000;\"><strong>Creole seasoning<\/strong><\/span>, mix well and set aside while you prep the vegetables.<\/p>\n<p><strong>Prep the vegetables: <\/strong>Chop &amp; mince all of the vegetables as required. Set up the mise en place for the other ingredients.<\/p>\n<p><strong>Saute Chicken, Sausage &amp; Vegetables: <\/strong>Heat the butter in a large straight sided skillet over medium-high heat and brown the chicken on all sides.<br \/>\nAdd the <span style=\"color: #ff0000;\"><strong>Andouille sausage <\/strong><\/span>and cook for another 3 minutes or so until the sausage begins to brown. Remove <strong>chicken<\/strong> and <strong>sausage<\/strong> and set aside,<br \/>\nAdd more <strong>oil<\/strong> if needed, the <strong>onion, celery,<\/strong> and <strong>bell pepper<\/strong> and cook for 3-4 minutes. Add the <strong>garlic<\/strong> and mix in. Cook for 30 seconds.<\/p>\n<p><strong>Jambalaya: <\/strong>Add the <strong>rice, diced tomatoes, <span style=\"color: #ff0000;\">hot sauce (optional)<\/span>, Worcestershire sauce, salt<\/strong> and <strong>pepper<\/strong> and if you&#8217;re brave. the remaining TBS of <span style=\"color: #ff0000;\"><strong>Creole seasoning<\/strong><\/span>, stir to combine. Return the <strong>meat<\/strong> to the pan and add the <strong>chicken broth<\/strong> and <strong>bay leaves.<\/strong><\/p>\n<p>Bring it to a boil, reduce the heat to medium-low, cover and simmer for 15 minutes, giving it one stir, around the halfway point. Add the <strong>shrimp<\/strong> (and <strong>calamari<\/strong> if using), cover, and simmer for another 10 minutes or until the <strong>rice<\/strong> is tender.<\/p>\n<p>Serve sprinkled with some <strong>sliced green onions<\/strong>.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>New Orleans Yield: 4 Servings Adapted from The Daring Gourmet I have updated the recipe to show the hot sauce as optional.
