It\u2019s amazing how much richness a little cream adds.<\/p>\n<ul>\n<li><span class=\"quantity\">4<\/span><span class=\"ingredient-name\">TBS butter <\/span><\/li>\n<li><span class=\"quantity\">4<\/span><span class=\"ingredient-name\">tsp flour (seems too little)<\/span><\/li>\n<li><span class=\"quantity\">1\u00bd<\/span><span class=\"ingredient-name\">cups chicken stock at room temperature or warmed <\/span><\/li>\n<li><span class=\"quantity\">\u00be<\/span><span class=\"ingredient-name\">cup heavy cream <\/span><\/li>\n<li><span class=\"id-ingredient-name\">Salt and Pepper to taste <\/span><\/li>\n<\/ul>\n<p>Melt the <strong>butter<\/strong> in a heavy saucepan and mix in the <strong>flour<\/strong> using a whisk. Cook for two to three minutes, whisking occasionally to remove the <strong>raw flour<\/strong> taste. Add the <strong>stock<\/strong> off the heat. whisking briskly to prevent lumps. Continue whisking over medium heat until the <strong>sauce<\/strong> thickens.
