Over beating makes them <strong>watery.<\/strong><\/p>\n<p>Heat <strong>butter<\/strong> in a pan over medium heat. Add <strong>ham, pepper, onion mixture<\/strong> and cook until <strong>veg<\/strong> are soft. Reduce heat to medium low. Add <strong>eggs,<\/strong> mix lightly and let cook from the bottom. Sprinkle the <strong>cheese<\/strong> when the top is still liquid. Give a sprinkle of <span style=\"color: #ff0000;\"><strong>cayenne<\/strong><\/span> if desired. Continue cooking until top is top looks wet, but is no longer runny.
