The striking difference is about half call for sweet Marsala and half call for dry. Depends on your personal taste. I much prefer the dry. Make sure you get a decent Marsala, preferably imported. Supermarket \u201ccooking Marsala\u201d is an abomination and shouldn\u2019t be used for anything.<\/p>\n<ul>\n<li><span class=\"quantity\">4<\/span><span class=\"ingredient-name\">chicken breasts, boneless &amp; skinless<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">cup AP flour<\/span><\/li>\n<li><span class=\"id-ingredient-name\">salt &amp; pepper <\/span><\/li>\n<li><span class=\"quantity\">3<\/span><span class=\"ingredient-name\">TBS oil<\/span><\/li>\n<li><span class=\"quantity\">4<\/span><span class=\"ingredient-name\">TBS butter, room temperature<\/span><\/li>\n<li><span class=\"quantity\">8<\/span><span class=\"ingredient-name\">oz fresh mushrooms, sliced<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">shallot, peeled and minced<\/span><\/li>\n<li><span class=\"quantity\">\u00be<\/span><span class=\"ingredient-name\">cup dry Marsala wine (see note below)<\/span><\/li>\n<li><span class=\"quantity\">\u00be<\/span><span class=\"ingredient-name\">cup chicken stock<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">packet unflavored gelatin (2\u00bd tsp)<\/span><\/li>\n<\/ul>\n<p><strong>Prepare sauce: <\/strong><\/p>\n<p>Combine Marsala and stock in a mixing bowl or large measuring cup and sprinkle gelatin all over surface. Set aside.<\/p>\n<p><strong>Prepare chicken: <\/strong><\/p>\n<p>Add flour, salt and pepper to a shallow bowl and mix to combine.<\/p>\n<p>Pound chicken breasts between sheets of plastic wrap until about \u00bc&#8221; thickness.<\/p>\n<p>Season chicken with salt and pepper, then dredge in flour, knocking off excess.<\/p>\n<p><strong>Cook mushrooms: <\/strong><\/p>\n<p>Heat 1 TBS oil in a skillet over medium heat.<br \/>\nAdd the mushrooms and a pinch of salt to the pan and cook for 5 to 10 minutes, until nicely browned. Set aside. Optional: Push mushrooms to one side and add a finely diced shallot to pan, cook until softened. Remove both to a dish and set aside.<\/p>\n<p><strong>Cook chicken: <\/strong><\/p>\n<p>Add 2 TBS oil and cook chicken breasts on medium heat for about 3 minutes on the first side, until lightly browned. Turn breasts over to cook other side until they are around 145\u00b0F internal temperature.<br \/>\nReturn mushrooms to pan and add Marsala-stock-gelatin mixture around chicken pieces. Cover and simmer for about 5 minutes. Check chicken temperature for 160\u00b0F. Remove chicken to serving plate.<br \/>\nRemove pan from heat. The wine is added to the chicken and mushrooms with butter to create the rich brown sauce for that authentic Italian taste.
