{"id":135,"date":"2017-10-17T14:13:00","date_gmt":"2017-10-17T21:13:00","guid":{"rendered":"http:\/\/nowellfamily.org\/cookbook\/?p=135"},"modified":"2023-10-24T15:41:25","modified_gmt":"2023-10-24T15:41:25","slug":"osso-buco-pressure-cooker","status":"publish","type":"post","link":"https:\/\/nowellfamily.org\/cookbook\/2017\/10\/17\/osso-buco-pressure-cooker\/","title":{"rendered":"Osso Buco \u2013 Pressure Cooker"},"content":{"rendered":"<h5 style=\"text-align: center;\">Yield: 6 Servings<\/h5>\n<h6 style=\"text-align: center;\">Adapted from Emeril Lagasse<\/h6>\n<ul>\n<li><span class=\"quantity\">6<\/span><span class=\"ingredient-name\">veal shanks (4 to 4 \u00bd lb total), about 1 \u00bd inches thick, tied tightly around the middle with kitchen string<\/span><\/li>\n<li><span class=\"quantity\">3\u00be<\/span><span class=\"ingredient-name\">tsp kosher salt<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">tsp freshly ground black pepper<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">cup all-purpose flour<\/span><\/li>\n<li><span class=\"quantity\">\u00bc<\/span><span class=\"ingredient-name\">cup olive oil<\/span><\/li>\n<li><span class=\"quantity\">2\u00bd<\/span><span class=\"ingredient-name\">cups chopped yellow onion (about 2 medium onions)<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">cup diced celery (2 to 3 ribs)<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">cup diced carrot (2 medium carrots)<\/span><\/li>\n<li><span class=\"quantity\">3<\/span><span class=\"ingredient-name\">TBS tomato paste<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">TBS minced garlic (4 to 6 cloves)<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">bay leaves<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tablespoon chopped fresh thyme leaves<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tablespoon chopped fresh rosemary leaves<\/span><\/li>\n<li><span class=\"quantity\">1\u00bd<\/span><span class=\"ingredient-name\">cups dry red wine<\/span><\/li>\n<li><span class=\"quantity\">4\u00bd<\/span><span class=\"ingredient-name\">cups rich veal stock, or homemade beef stock, or substitute 1 cup demi-glace and 3\u00bd cups packaged low sodium beef broth<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">TBS unsalted butter, at room temperature<\/span><\/li>\n<li><span class=\"quantity\">\u00bc<\/span><span class=\"ingredient-name\">cup chopped fresh parsley leaves<\/span><\/li>\n<li><strong><span class=\"&quot;sect-ingredient-name\">Note: Reduce all ingredients proportionally for less than 4 lbs shanks.<\/span><\/strong><\/li>\n<\/ul>\n<p><strong><br \/>\nSeason<\/strong> the <strong>meat<\/strong> on all sides with 2\u00bd tsp of the <strong>salt<\/strong> and 1 tsp of the <strong>pepper.<\/strong> Dredge the <strong>veal shanks<\/strong> in the <strong>flour,<\/strong> shaking them to remove any excess. Set the <strong>shanks<\/strong> aside. Reserve 3 TBS of the remaining dredging <strong>flour<\/strong> and discard the rest.<\/p>\n<p class=\"Body\">Set a 6-qt Instant Pot to the <b>SAUT\u00c9 HIGH<\/b> setting. Add <strong>oil<\/strong> and heat until shimmering. Brown the <strong>shanks<\/strong> on all sides, in batches if necessary, 10 to 12 minutes per batch. Remove the <strong>shanks<\/strong> from the Instant Pot and set aside.<\/p>\n<p>Add the <strong>onion, celery,<\/strong> and <strong>carrot<\/strong> to the Instant Pot and cook until softened and lightly browned around the edges, 4 to 6 minutes. Add the <strong>tomato paste, garlic, bay leaves,<\/strong> half of the <strong>thyme,<\/strong> half of the <strong>rosemary,<\/strong> the remaining 1\u00bc tsp <strong>salt,<\/strong> and the remaining 1 tsp <strong>pepper.<\/strong> Cook, stirring, for 2 minutes. Add the <strong>red wine,<\/strong> scraping the bottom of the pan to loosen any browned bits. Add the <strong>stock<\/strong> and return the <strong>shanks<\/strong> to the Instant Pot. Bring to a boil. Seal Instant Pot and set to <strong>MANUAL HIGH<\/strong> pressure 65 minutes. Note: With 3 lbs of shanks, the cook time was too long. Try 45 minutes.<\/p>\n<p>Open the pressure release valve and allow the steam to escape. Unlock and carefully open the lid. The <strong>shanks<\/strong> should be nearly fall-from-the-bone tender. If the <strong>meat<\/strong> still meets with resistance, continue to cook under pressure for 2 to 4 minutes longer. Carefully transfer the <strong>shanks<\/strong> to a bowl and tent it with aluminum foil to keep warm. Remove and discard the <strong>bay leaves.<\/strong><\/p>\n<p>In a medium heat-proof bowl, mix the <strong>butter<\/strong> with the reserved dredging <strong>flour<\/strong> to form a smooth <strong>paste.<\/strong> Ladle 1 cup of the <strong>hot cooking liquid<\/strong> into the bowl and whisk to combine. Then stir this <strong>flour-broth mixture<\/strong> into the <strong>cooking liquid<\/strong> in the Instant Pot. Add the remaining <strong>rosemary<\/strong> and <strong>thyme.<\/strong> Set the Instant Pot to the <strong>SAUT\u00c9 LOW<\/strong> and cook, stirring occasionally, until the <strong>sauce<\/strong> is thickened and smooth and any <strong>floury<\/strong> taste is gone, 5 to 10 minutes. Adjust the <strong>seasoning<\/strong> if necessary, then return the <strong>shanks<\/strong> to the <strong>sauce<\/strong> to rewarm briefly before serving.
