This is a quick cooking sauce and does not need long simmering.\u00a0 Once the sauce is mixed and simmering, the sauce will be done in the time it takes to boil the water and cook the pasta.<\/p>\n<p><strong>Meat:<\/strong><\/p>\n<ul>\n<li><span class=\"quantity\">4-6<\/span><span class=\"ingredient-name\">Italian sausages, sweet, mild, hot or combination (optional)<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">lb ground beef<\/span><\/li>\n<li><span class=\"quantity\">8<\/span><span class=\"ingredient-name\">oz ground pork or ground sausage (optional)<\/span><\/li>\n<\/ul>\n<p><strong>Veg:<\/strong><\/p>\n<ul>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">TBS Olive oil<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">small or medium onion chopped fine<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">green bell pepper, small dice (optional)<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">cloves garlic minced<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">green bell pepper, diced<\/span><\/li>\n<li><span class=\"quantity\">8<\/span><span class=\"ingredient-name\">oz mushrooms, sliced or quartered (optional)<\/span><\/li>\n<\/ul>\n<p><strong>For sauce:<\/strong><\/p>\n<ul>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">14-oz can tomato sauce<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">14-oz can diced tomatoes<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">6-oz can tomato paste (optional)<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">6-oz can water (paste can) (optional)<\/span><\/li>\n<\/ul>\n<p><strong>Seasonings:<\/strong><\/p>\n<ul>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp basil<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp oregano<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp salt<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp sugar<\/span><\/li>\n<li><span class=\"quantity\">\u00bc to \u00bd<\/span><span class=\"ingredient-name\">tsp fresh ground black pepper<\/span><\/li>\n<\/ul>\n<p><strong><br \/>\nFor sausage:<\/strong> If adding the optional <b>sausage<\/b>, place them in a saut\u00e9 pan over medium high heat with a cup of <b>water<\/b>. Bring to a boil, cover and reduce to simmer. Turn <b>sausage<\/b> over after 6 minutes, cover and cook for another 6 minutes. Pour <strong>water<\/strong> into a glass measuring cup. Return to stove, and saut\u00e9 sausage until browned on all sides 4-8 minutes. Set aside.<\/p>\n<p><strong>For mushrooms:<\/strong> If adding the optional <strong>mushrooms<\/strong>, place them and a TBS of <strong>olive oil<\/strong> to the saut\u00e9 pan over medium heat. Cook for 4-8 minutes, until <strong>water<\/strong> evaporates and <strong>mushrooms<\/strong> brown. Set aside.<\/p>\n<p><strong>Sweat vegetables:<\/strong> In a 2-qt sauce pan, heat 1 TBS <strong>olive oil<\/strong> and sweat (see Terms) <strong>onion<\/strong> and optional <strong>green pepper<\/strong> over medium heat for 5 to 8 minutes until soft and translucent but not browned. Add <strong>garlic<\/strong>, saut\u00e9 30 seconds more. Remove to a small bowl.<\/p>\n<p><strong>For ground beef:<\/strong> Carefully remove any left over <strong>garlic<\/strong>, otherwise it will burn and get bitter. Turn heat up to medium-high. Add <strong>ground beef<\/strong> and brown until mostly cooked through. Reduce heat to medium.<\/p>\n<p><strong>For sauce: <\/strong>Return <strong>onion<\/strong> and <strong>garlic<\/strong> to pan. Add <strong>tomato sauce<\/strong>, <strong>diced tomatoes<\/strong> and optional <strong>tomato paste<\/strong>. Fill paste can with tap or <strong>sausage water<\/strong> and add. Add all seasonings and 1 TBS <strong>olive oil<\/strong>. Stir carefully. If using, add <strong>sausage<\/strong> to pan. Cover, bring to a boil. Turn heat down to low and simmer while pasta cooks.<\/p>\n<p><strong>Options:<\/strong><\/p>\n<p>Go meatless with no beef or sausage. Ha ha ha.<br \/>\nReplace onion with 1 TBS Minced onion flakes.<br \/>\nReplace garlic with \u00bd tsp garlic powder (only if desperate).<br \/>\nAdjust seasonings.
