Most of the time I use Craisins, dried sweetened cranberries.<\/p>\n<p><strong>For dry ingredients:<\/strong><\/p>\n<ul>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">cups old-fashioned or instant oats<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">cup all-purpose flour<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp kosher salt<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">tsp baking soda<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">tsp ground cinnamon<\/span><\/li>\n<li><span class=\"quantity\">\u215b<\/span><span class=\"ingredient-name\">tsp freshly ground nutmeg<\/span><\/li>\n<\/ul>\n<p><strong>For wet ingredients:<\/strong><\/p>\n<ul>\n<li><span class=\"quantity\">\u00be<\/span><span class=\"ingredient-name\">cup (1\u00bd sticks) unsalted butter, room temperature<\/span><\/li>\n<li><span class=\"quantity\">\u00be<\/span><span class=\"ingredient-name\">cup (packed) light brown sugar<\/span><\/li>\n<li><span class=\"quantity\">\u00bc<\/span><span class=\"ingredient-name\">cup granulated sugar<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">large egg, room temperature<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">TBS pure maple syrup<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">tsp vanilla extract or paste<\/span><\/li>\n<\/ul>\n<p><strong>Fruit:<\/strong><\/p>\n<ul>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">cup raisins, dried cranberries or dried sour cherries or a mix<\/span><\/li>\n<\/ul>\n<p><strong><br \/>\nFor dry ingredients:<\/strong><\/p>\n<p>Whisk <strong>flour, salt, baking soda, cinnamon,<\/strong> and <strong>nutmeg<\/strong> in a medium bowl; stir in <strong>oats.<\/strong><\/p>\n<p><strong>For wet ingredients:<\/strong><\/p>\n<p>Using a stand mixer on medium speed, beat <strong>butter, brown sugar,<\/strong> and <strong>granulated sugar<\/strong> in a large bowl, scraping down sides of bowl, until light and fluffy, 3\u20134 minutes. Add <strong>egg, syrup,<\/strong> and <strong>vanilla<\/strong> and beat until incorporated, about 1 minute. Reduce speed to low; add <strong>dry ingredients<\/strong> and <strong>fruit<\/strong> and continue to beat, scraping down sides and bottom of bowl, until just combined.<\/p>\n<p>Let sit at room temperature at least 1 hour to hydrate <strong>oatmeal.<\/strong><\/p>\n<p><strong>Bake:<\/strong><\/p>\n<p>Preheat oven to 350\u00b0F. Line 2 rimmed baking sheets with parchment paper or a Silpad. Using a \u00bc-cup measuring cup, place 6 blobs of <strong>batter<\/strong> with 3&#8243; spacing. Do not flatten, the <strong>cookies<\/strong> will spread as they bake.<\/p>\n<p>Bake <strong>cookies,<\/strong> rotating sheets halfway through, until edges are golden brown and firm but centers are soft, 13-15 minutes. Let sit on sheets 10 minutes, then transfer to wire racks; let cool.<\/p>\n<p><strong>Optional<\/strong>:<\/p>\n<p>Put 1 TBS of <strong>table sugar<\/strong> in a flat dish and spread it out.\u00a0 As you transfer the <strong>cookies<\/strong> to the rack, first lightly press each into the <strong>sugar,<\/strong> tap off extra and place on rack.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Yield: 18 Large Cookies Adapted from Bon App\u00e9tit Great cookie recipe.
