{"id":145,"date":"2017-10-17T14:24:57","date_gmt":"2017-10-17T21:24:57","guid":{"rendered":"http:\/\/nowellfamily.org\/cookbook\/?p=145"},"modified":"2023-08-29T17:43:53","modified_gmt":"2023-08-29T17:43:53","slug":"spaetzle","status":"publish","type":"post","link":"https:\/\/nowellfamily.org\/cookbook\/2017\/10\/17\/spaetzle\/","title":{"rendered":"Spaetzle"},"content":{"rendered":"<h3 style=\"text-align: center;\">Little Sparrows<\/h3>\n<h4 style=\"text-align: center;\">Yield: 4<\/h4>\n<h6 style=\"text-align: center;\">Adapted from Tyler Florence<\/h6>\n<p>You really need to make a double batch and freeze some.<\/p>\n<ul>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">cup all-purpose flour<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp salt<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">tsp ground pepper<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">tsp ground nutmeg<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">large eggs<\/span><\/li>\n<li><span class=\"quantity\">\u00bc<\/span><span class=\"ingredient-name\">cup milk<\/span><\/li>\n<li><span class=\"quantity\">3<\/span><span class=\"ingredient-name\">TBS unsalted butter<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">TBS minced fresh chives for garnish<\/span><\/li>\n<\/ul>\n<p>In a large bowl, combine the flour, salt, pepper, and nutmeg. In another mixing bowl, whisk the eggs and milk together. Make a well in the center of the dry ingredients and pour in the egg-milk mixture. Gradually draw in the flour from the sides and combine well; the dough should be smooth and thick. Let the dough rest for 10 to 15 minutes.<\/p>\n<p>Bring 3 quarts of salted water to a boil in a large pot, then reduce to a simmer. To form the spaetzle, hold a large holed colander or slotted spoon over the simmering water and push the dough through the holes with a spatula or spoon. Do this in batches so you don&#8217;t overcrowd the pot. Cook for 3 to 4 minutes or until the spaetzle floats to the surface, stirring gently to prevent sticking. Dump the spaetzle into a colander and give it a quick rinse with cool water.<\/p>\n<p><strong>Tip:<\/strong> Spaetzle freezes well.\u00a0 After rinsing, dry and mix well with a small amount of olive oil.\u00a0 Freeze in suitable quantities.\u00a0 Thaw and continue from here.<\/p>\n<p>Melt the butter in a large skillet over medium heat and add the spaetzle; tossing to coat.
