Extra chewiness is attained by substituting bread flour for regular all purpose, replacing one egg white with milk, and changing the ratio of brown to white sugar.<\/p>\n<ul>\n<li><span class=\"quantity\">8<\/span><span class=\"ingredient-name\">oz unsalted butter<\/span><\/li>\n<li><span class=\"quantity\">12<\/span><span class=\"ingredient-name\">oz bread flour<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp kosher salt<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp baking soda<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">oz granulated sugar<\/span><\/li>\n<li><span class=\"quantity\">8<\/span><span class=\"ingredient-name\">oz light brown sugar<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">large egg<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">large egg yolk<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">TBS whole milk<\/span><\/li>\n<li><span class=\"quantity\">1\u00bd<\/span><span class=\"ingredient-name\">tsp vanilla extract<\/span><\/li>\n<li><span class=\"quantity\">12<\/span><span class=\"ingredient-name\">oz semisweet chocolate chips<\/span><\/li>\n<\/ul>\n<p><strong><br \/>\nMelt<\/strong> the <strong>butter<\/strong> in a 2-quart saucepan over low heat, then set aside to cool slightly.<\/p>\n<p>Sift together the <strong>flour, salt<\/strong> and <strong>baking soda<\/strong> onto a paper plate.<\/p>\n<p>Pour the <strong>butter<\/strong> into your stand mixer&#8217;s work bowl. Add the <strong>sugars<\/strong> and beat with the paddle attachment on medium speed for 2 minutes.<\/p>\n<p>Meanwhile in a separate bowl, whisk together the <strong>whole egg, egg yolk, milk<\/strong> and <strong>vanilla extract.<\/strong><\/p>\n<p>Slow the mixer to &#8220;stir&#8221; and slowly work the <strong>egg mixture<\/strong> into the <strong>butter<\/strong> and <strong>sugar.<\/strong> Mix until thoroughly combined, about 30 seconds<\/p>\n<p>Using the paper plate as a slide, gradually integrate the <strong>dry ingredients,<\/strong> stopping a couple of times to scrape down the side of the bowl with a rubber spatula<\/p>\n<p>Once the <strong>flour<\/strong> is worked in, drop the speed to &#8220;stir&#8221; and add the <strong>chocolate chips.<\/strong><\/p>\n<p>Chill the <strong>dough<\/strong> for 1 hour.<\/p>\n<p>Heat the oven to 375\u00b0F and place the racks in the top third and bottom third of the oven.<\/p>\n<p>Scoop the <strong>dough<\/strong> into 1\u00bd-ounce portions onto parchment paper-lined or Silpat lined half sheet pans, 6 <strong>cookies<\/strong> per sheet.<\/p>\n<p>Bake two sheets at a time for 15 minutes, rotating the pans halfway through.<\/p>\n<p>Remove from the oven, slide the parchment with the <strong>cookies<\/strong> onto a cooling rack, and wait at least 5 minutes before devouring.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Yield: about 2 dozen cookies Alton Brown This is essentially a hack of the most famous cookie recipe in the world, which we all know from the back of the Nestle \u201cmorsel\u201d bag.
