Posole (or pozole) is usually made with chicken or pork. It makes a great winter evening meal.<\/p>\n<ul>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">lb boned, skinned chicken thighs<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">onion, peeled and chopped<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">red bell pepper, rinsed, stemmed, seeded, and chopped<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">cloves garlic, peeled and minced<\/span><\/li>\n<li><span class=\"quantity\">3<\/span><span class=\"ingredient-name\">cups chicken broth<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">cans (14\u00bd oz each) hominy, rinsed and drained<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">can (10 oz) red enchilada sauce<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp dried oregano<\/span><\/li>\n<li><span class=\"id-ingredient-name\">4 to 6 oz bag spinach leaves, rinsed<\/span><\/li>\n<li><span class=\"id-ingredient-name\">salt and pepper <\/span><\/li>\n<li><span class=\"id-ingredient-name\">lime wedges<\/span><\/li>\n<\/ul>\n<p>Rinse chicken and pat dry. Trim off and discard any fat. Cut chicken into 1-inch chunks.<\/p>\n<p>In a nonstick 5- to 6-quart pan, combine chicken and 2 tablespoons water. Cover and cook over medium-high heat, stirring occasionally, until very juicy, 15 to 20 minutes. Uncover, increase heat to high, and cook, stirring often, until chicken is browned, about 8 minutes.<\/p>\n<p>Add onion, bell pepper, and garlic; stir often until onion is lightly browned, 3 to 5 minutes.<\/p>\n<p>Add broth, hominy, enchilada sauce, and oregano. Bring to a boil over high heat, then reduce heat, cover, and simmer to blend flavors, about 10 minutes.<\/p>\n<p>Stir in spinach and cook just until wilted, 1 to 2 minutes. Add salt and pepper to taste.<\/p>\n<p>Ladle into wide individual bowls or a large serving bowl.
