Alternatively, this moist, lemony, cornbread-like cake can be served with a dollop of vanilla yogurt.<\/p>\n<ul>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">cup yellow or white cornmeal<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">large eggs plus 2 whites<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">cup nonfat yogurt <\/span><\/li>\n<li><span class=\"quantity\">1\u00bd<\/span><span class=\"ingredient-name\">TBS grated lemon zest <\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">TBS fresh lemon juice <\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">tsp lemon extract <\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">cup assorted fresh or frozen, thawed berries (strawberries, blueberries or raspberries) <\/span><\/li>\n<li><span class=\"quantity\">\u00bc<\/span><span class=\"ingredient-name\">cup black-currant liqueur (such as cr\u00e8me de cassis) <\/span><\/li>\n<\/ul>\n<p><strong><br \/>\nIn<\/strong> a large mixing bowl, whisk together <strong>sugar, oil<\/strong> and <strong>butter<\/strong> until well combined. Add <strong>eggs<\/strong> and <strong>egg whites,<\/strong> one at a time, stirring until just combined. In a small bowl, stir together <strong>yogurt, lemon zest, lemon juice<\/strong> and <strong>lemon extract.<\/strong> Fold into the <strong>sugar<\/strong> mixture until just combined. Fold in the <strong>dry ingredients<\/strong> until just combined. Do not over mix.<\/p>\n<p>Place the <strong>batter<\/strong> in the prepared pan and smooth the top with a rubber spatula. Bake for about 40 minutes, or until the <strong>cake<\/strong> is golden and a toothpick inserted into the center comes out clean. Cool for 10 minutes on a rack, invert the cake, peel off the paper and cool completely.
