{"id":1524,"date":"2018-05-07T14:51:14","date_gmt":"2018-05-07T21:51:14","guid":{"rendered":"http:\/\/nowellfamily.org\/cookbook\/?p=1524"},"modified":"2018-05-07T14:51:14","modified_gmt":"2018-05-07T21:51:14","slug":"sauce-au-poivre","status":"publish","type":"post","link":"https:\/\/nowellfamily.org\/cookbook\/2018\/05\/07\/sauce-au-poivre\/","title":{"rendered":"Sauce au Poivre"},"content":{"rendered":"<h5 style=\"text-align: center\">Peppercorn Sauce<\/h5>\n<h5 style=\"text-align: center\">Yield: 4 servings<\/h5>\n<p>Forget about having to go to a fancy upscale restaurant to be served Steak au Poivre when you can make your own Peppercorn Sauce at home in less than 20 minutes.<\/p>\n<ul>\n<li><span class=\"quantity\">\u00bc<\/span><span class=\"ingredient-name\">cup finely chopped shallots<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">oz butter (\u00bc stick)<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">TBS cracked black (or green) peppercorn<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">cup red wine (Use a good table wine)<\/span><\/li>\n<li><span class=\"quantity\">8<\/span><span class=\"ingredient-name\">fl oz demi-glace<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">TBS finely chopped parsley<\/span><\/li>\n<li style=\"list-style-type: none\"><\/li>\n<li><span class=\"id-ingredient-name\">Pepper to taste <\/span><\/li>\n<\/ul>\n<p>Melt butter in a sauce pan and saut\u00e9 shallots for approx. 2 minutes (until transparent). Add peppercorns and red wine, and reduce to an essence (approx. 2-3 minutes).<\/p>\n<p>Add the demi-glace and stir with a whisk until glace is dissolved. Add water and simmer until the sauce is thick enough to coat a spoon.<\/p>\n<p>Blend in chopped parsley and serve over broiled steaks. Sauce is best over strip steaks (approx. 8-12 oz) with all fat trimmed.
