{"id":1541,"date":"2018-05-22T17:44:40","date_gmt":"2018-05-23T00:44:40","guid":{"rendered":"http:\/\/nowellfamily.org\/cookbook\/?p=1541"},"modified":"2025-10-31T22:05:55","modified_gmt":"2025-10-31T22:05:55","slug":"pork-tenderloin-pan-roasted","status":"publish","type":"post","link":"https:\/\/nowellfamily.org\/cookbook\/2018\/05\/22\/pork-tenderloin-pan-roasted\/","title":{"rendered":"Pork Tenderloin \u2013 Pan Roasted"},"content":{"rendered":"<h4 style=\"text-align: center;\">Yield: 2 Servings (can be doubled)<\/h4>\n<h6 style=\"text-align: center;\">Scott Nowell<\/h6>\n<p>Ah, so good with a nice seasoned crumb crust.<\/p>\n<ul>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">pork tenderloin<\/span><\/li>\n<li><span class=\"id-ingredient-name\">all-purpose flour<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">egg beaten<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">TBS milk<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">cup panko bread crumbs<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">TBS minced flat leaf parsley<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">tsp finely minced rosemary<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">TBS olive oil<\/span><\/li>\n<li><span class=\"quantity\">1-2<\/span><span class=\"ingredient-name\">TBS butter<\/span><\/li>\n<li><span class=\"id-ingredient-name\">salt <\/span><\/li>\n<li><span class=\"id-ingredient-name\">black pepper<\/span><\/li>\n<\/ul>\n<p>Preheat oven to 375\u00b0F.<\/p>\n<p>Remove any <strong>fat<\/strong> and <strong>silver skin<\/strong> from <strong>pork.<\/strong> Season well with salt and <strong>pepper.<\/strong> Sprinkle all over with <strong>flour.<\/strong> Pat <strong>flour<\/strong> to stick.<\/p>\n<p>Mix beaten <strong>egg<\/strong> with <strong>milk<\/strong> in shallow dish.<\/p>\n<p>Mix <strong>panko, parsley<\/strong> and <strong>rosemary<\/strong> in another shallow dish or plate.<\/p>\n<p>Heat <strong>oil<\/strong> in oven proof skillet large enough to hold <strong>tenderloin.<\/strong><\/p>\n<p>Dip <strong>tenderloin<\/strong> in <strong>egg-milk mixture<\/strong> and roll to coat.<\/p>\n<p>Roll <strong>tenderloin<\/strong> in <strong>panko mixture<\/strong> pressing to coat all over completely.<\/p>\n<p>When <strong>oil<\/strong> is hot, brown <strong>tenderloin<\/strong> for two to three minutes per side.<\/p>\n<p>Place skillet in oven and roast for 10 minutes. Check temperature. Should be 145-150\u00b0F.
