I can&#8217;t help but tweak it occasionally.\u00a0<\/p>\n<p><strong>Steak<\/strong><\/p>\n<ul>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">lb cube steak, 4 pieces<\/span><\/li>\n<li><span class=\"id-ingredient-name\">Kosher salt and freshly ground black pepper<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">cup all-purpose flour<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">tsp baking soda<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">tsp baking powder<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">tsp paprika<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">tsp Kosher salt <\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp freshly ground black pepper<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">whole egg, beaten<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">cup milk<\/span><\/li>\n<li><span class=\"id-ingredient-name\"><span style=\"color: #ff0000;\"><strong>hot sauce<\/strong><\/span>, to taste (optional)<\/span><\/li>\n<li><span class=\"id-ingredient-name\">vegetable oil for frying<\/span><\/li>\n<\/ul>\n<p><strong><span class=\"&quot;sect-ingredient-name\">Gravy<\/span><\/strong><\/p>\n<ul>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">heaping TBS all-purpose flour<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">cup water<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">heaping tsp Better Than Bouillon, Beef<\/span><\/li>\n<li><span class=\"id-ingredient-name\">Kosher salt and freshly ground black pepper<\/span><\/li>\n<\/ul>\n<p><strong><br \/>Season<\/strong> the <strong>steak<\/strong> on both side with <strong>salt<\/strong> and <strong>pepper.<\/strong><\/p>\n<p>In a medium flat dish or a plastic bag, add the <strong>flour, baking powder, baking soda, salt<\/strong> and <strong>pepper,<\/strong> and combine well.<\/p>\n<p>In another flat dish stir together the <strong>egg, milk, <span style=\"color: #ff0000;\">hot sauce<\/span><\/strong> to taste (optional), and season well with <strong>salt<\/strong> and <strong>pepper.<\/strong><\/p>\n<p>Dredge each piece of <strong>meat<\/strong> in the <strong>seasoned flour,<\/strong> then in the <strong>seasoned milk<\/strong> and back into the <strong>flour,<\/strong> allowing excess to drip off. Set out on a rack fitted over a baking sheet and allow to rest in the refrigerator for 20 to 25 minutes before cooking.<\/p>\n<p>Add about 2 to 3 TBS <strong>vegetable<\/strong>\u00a0oil to a large skillet or cast iron pan and heat over medium-high heat to 365\u00b0F. Once heated and working in batches, fry <strong>steaks<\/strong> 2 at a time until golden brown, about 3 to 4 minutes per side. Remove <strong>steaks<\/strong> and drain on a rack over paper towels.<\/p>\n<p><strong>Gravy: <\/strong><\/p>\n<p>Carefully remove some of the <strong>fat<\/strong> from the pan, reserving 2 TBS. With the pan over medium heat, sprinkle in 1 heaping TBS of <strong>flour<\/strong> and whisk to make a <strong>roux,<\/strong> scraping up any brown bits on the bottom of the pan. Once the <strong>flour<\/strong> has been fully incorporated, slowly add the <strong>milk<\/strong> and continue to whisk until the <strong>gravy<\/strong> is nice and thick.
