Mmm, good.<\/p>\n<p><strong>Shrimp &amp; Marinade:<\/strong><\/p>\n<ul>\n<li><span class=\"quantity\">8<\/span><span class=\"ingredient-name\">oz medium shrimp<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">pinch salt<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">tsp sesame seed oil<\/span><\/li>\n<li><span class=\"id-ingredient-name\">pinch white pepper<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">egg white<\/span><\/li>\n<li><span class=\"quantity\">1\u00bd<\/span><span class=\"ingredient-name\">TBS corn starch<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">TBS vegetable oil<\/span><\/li>\n<\/ul>\n<p><strong>Broccoli:<\/strong><\/p>\n<ul>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">lb broccoli florets <\/span><\/li>\n<\/ul>\n<p><strong>Slurry:<\/strong><\/p>\n<ul>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">TBS corn starch<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">TBS water <\/span><\/li>\n<\/ul>\n<p><strong>Sauce:<\/strong><\/p>\n<ul>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">TBS oyster sauce<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp sugar<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp sesame oil<\/span><\/li>\n<li><span class=\"id-ingredient-name\">pinch white pepper<\/span><\/li>\n<\/ul>\n<p><strong>Stir-fry:<\/strong><\/p>\n<ul>\n<li><span class=\"quantity\">4<\/span><span class=\"ingredient-name\">TBS + 1 tsp of oil<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp minced ginger<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp minced garlic<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">TBS Shaoxing cooking wine<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">cup water + 2 TBS of water<\/span><\/li>\n<\/ul>\n<p><strong><span style=\"color: #ff0000;\"><br \/>\nMise, Mise, Mise, get your mise together!<\/span> This means me! This happens so fast, that you must get everything prepped and measured before cooking starts.<\/strong><\/p>\n<p><strong>Marinate the shrimp: <\/strong><\/p>\n<p>In a bowl add <strong>shrimp, salt,<\/strong> 2 tsp <strong>sesame oil,<\/strong> a pinch of <strong>white pepper, egg white,<\/strong> 1\u00bd TBS of <strong>cornstarch,<\/strong> and mix well. Add 1 TBS <strong>cooking oil<\/strong> and mix a bit more. Marinate for 5 to 15 minutes.<\/p>\n<p><strong>Make the sauce:<\/strong><\/p>\n<p>In a small bowl add <strong>oyster sauce, sugar, sesame oil, white pepper.<\/strong><\/p>\n<p><strong>Make a slurry:<\/strong><\/p>\n<p>In another bowl, make a <strong>slurry<\/strong> from 1 TBS <strong>cornstarch<\/strong> and 2 TBS <strong>water.<\/strong><\/p>\n<p><strong>Broccoli: <\/strong><\/p>\n<p>Put <strong>broccoli<\/strong> and 1 tsp <strong>cooking oil<\/strong> in boiling <strong>water.<\/strong> Return to boil and cook to desired tenderness, about 2 to 3 minutes. Drain, rinse in <strong>cold water<\/strong> to stop cooking.<\/p>\n<p><strong>Stir-fry: <\/strong><\/p>\n<p>Add 2 TBS of <strong>cooking oil<\/strong> and the <strong>shrimp<\/strong> to your wok. Cook on medium heat until opaque. Remove to bowl with <strong>broccoli.<\/strong><\/p>\n<p>To the wok, add a small amount of <strong>cooking oil<\/strong> and add <strong>ginger<\/strong> and <strong>garlic,<\/strong> stir. Return <strong>shrimp<\/strong> and <strong>broccoli<\/strong> to wok. Add 1 TBS <strong>cooking wine<\/strong> and 2 TBS <strong>water<\/strong> to wok and stir for a few seconds.<\/p>\n<p>Add <strong>sauce<\/strong> to wok, stir.<\/p>\n<p>To thicken the <strong>sauce,<\/strong> slowly add <strong>slurry<\/strong> to your stir-fry and return to boil.
