Makes a great combination and alternative to beef with broccoli, etc. My last time making this I only had half a bunch of celery and no green onions. I add a julienned onion to round it out. An excellent dish.<\/p>\n<p><strong>Beef:<\/strong><\/p>\n<ul>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">lb beef flank steak<\/span><\/li>\n<\/ul>\n<p><strong>Tenderize: (optional)<br \/>\n<\/strong><\/p>\n<ul>\n<li><span class=\"quantity\">\u00bc<\/span><span class=\"ingredient-name\">tsp baking soda<\/span><\/li>\n<li><span class=\"quantity\">3<\/span><span class=\"ingredient-name\">TBS water<\/span><\/li>\n<\/ul>\n<p><strong>Marinade:<\/strong><\/p>\n<ul>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">egg white<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">TBS light soy sauce<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp Chinkiang black vinegar<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">pinch white pepper<\/span><\/li>\n<li><span class=\"quantity\">\u00bc<\/span><span class=\"ingredient-name\">tsp salt<\/span><\/li>\n<li><span class=\"quantity\">1-2\u00bd<\/span><span class=\"ingredient-name\">TBS of corn starch<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">TBS of oil<\/span><\/li>\n<\/ul>\n<p><strong>Celery &amp; Stir-fry:<\/strong><\/p>\n<ul>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">lb celery, \u00bd inch diagonal slices<\/span><\/li>\n<li><span class=\"quantity\">6<\/span><span class=\"ingredient-name\">cups water<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp salt<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">stalks green onion, chopped 1 inch lengths or 1 onion, julienned<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp ginger, minced<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp garlic, minced<\/span><\/li>\n<\/ul>\n<p><strong>Sauce:<\/strong><\/p>\n<ul>\n<li><span class=\"quantity\">\u00bc<\/span><span class=\"ingredient-name\">cup beef broth<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp light soy sauce<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">TBS oyster sauce<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp sesame oil<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp sugar<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp corn starch<\/span><\/li>\n<\/ul>\n<p><strong><br \/>\nBeef:<\/strong><\/p>\n<p><strong>Note:<\/strong> Tenderize the beef with a Jaccard before slicing. (optional)<\/p>\n<p>Slice the <strong>beef<\/strong> with the blade tilted 45 degrees to get a thin cut through the grain.<\/p>\n<p><strong>Tenderize: (optional)<\/strong><\/p>\n<p>Mix 1\/4 tsp baking soda and 3TBS water in a small bowl. Add beef and let sit for at least 30 minutes.<\/p>\n<p><strong>Marinate the beef:<\/strong><\/p>\n<p>Add <strong>egg white<\/strong> to a small bowl. Add <strong>soy<\/strong>\u00a0sauce, <strong>vinegar<\/strong> and beat until foamy. Add <strong>meat<\/strong> and mix to coat. Add <strong>corn starch,<\/strong> mix. Add <strong>oil<\/strong> to <strong>meat<\/strong> and stir well. Marinate 15 to 30 minutes.<\/p>\n<p>Drain to remove excess <strong>marinade.<\/strong><\/p>\n<p><strong>Make the sauce:<\/strong><\/p>\n<p>Mix all of the <strong>sauce<\/strong> ingredients in a small bowl and set aside.<\/p>\n<p><strong>Prepare celery:<\/strong><\/p>\n<p>Bring 6 cups of <strong>water<\/strong> to a boil, add 1 tsp <strong>salt<\/strong> and <strong>celery<\/strong> and <strong>onion<\/strong> if using. Blanch 2 minutes, drain and set aside.<\/p>\n<p><strong>Stir Fry:\u00a0<\/strong><\/p>\n<p>Add <strong>oil<\/strong> to wok. Add <strong>meat<\/strong> to wok, stir fry until light brown all over, 1 to 2 minutes. Remove <strong>meat<\/strong> fromwok, set aside.<\/p>\n<p>Add <strong>green onion, garlic, ginger<\/strong> to wok. Stir fry until fragrant. Add additional <strong>oil<\/strong> if the wok is too dry.<\/p>\n<p>Add <strong>celery<\/strong> and stir fry one minute. Return <strong>meat<\/strong> to wok. Stir fry 30 seconds. Add <strong>sauce<\/strong> and bring to boil. Stir until thickened. Taste and adjust <strong>seasoning.<\/strong> An extra tsp each of <strong>soy sauce<\/strong> and <strong>oyster sauce<\/strong> is always welcome.<\/p>\n<p>Serve with <strong>steamed rice.<\/strong><\/p>\n","protected":false},"excerpt":{"rendered":"<p>Yield: 2 to 3 Servings Adapted from Happy Wok Love tender-crisp cooked celery.
