{"id":1666,"date":"2018-08-04T16:30:20","date_gmt":"2018-08-04T23:30:20","guid":{"rendered":"http:\/\/nowellfamily.org\/cookbook\/?p=1666"},"modified":"2024-10-25T19:54:36","modified_gmt":"2024-10-25T19:54:36","slug":"traditional-german-schnitzel-schweineschnitzel","status":"publish","type":"post","link":"https:\/\/nowellfamily.org\/cookbook\/2018\/08\/04\/traditional-german-schnitzel-schweineschnitzel\/","title":{"rendered":"Traditional German Schnitzel (Schweineschnitzel)"},"content":{"rendered":"<h5 style=\"text-align: center;\">Yield: 4 Servings<\/h5>\n<h6 style=\"text-align: center;\">Kimberly Killebrew \/ Daring Gourmet<\/h6>\n<p style=\"text-align: left;\">Schnitzel can be made with about any meat.\u00a0 Due to the high price of beef and pork, you often find Putenschnitzel, made from turkey cutlets, offered in restaurants in Germany.<\/p>\n<p><strong>Note:<\/strong> For J\u00e4gerschnitzel, use this recipe and top with Brown Mushroom Gravy, see <a href=\"http:\/\/nowellfamily.org\/cookbook\/2018\/08\/04\/brown-mushroom-gravy-2\/\">recipe<\/a>.<\/p>\n<ul>\n<li><span class=\"quantity\">4<\/span><span class=\"ingredient-name\">boneless pork chops, (to make Austrian Schweineschnitzel use thin veal cutlets)<\/span><\/li>\n<li><span class=\"id-ingredient-name\">salt and freshly ground black pepper<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">cup all-purpose flour combined with 1 tsp salt<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">large eggs, lightly beaten<\/span><\/li>\n<li><span class=\"quantity\">\u00be<\/span><span class=\"ingredient-name\">cup plain breadcrumbs<\/span><\/li>\n<\/ul>\n<p><strong><br \/>\nPlace<\/strong> the <strong>pork chops<\/strong> between two sheets of plastic wrap and pound them until just 1\/4 inch thick with the flat side of a meat tenderizer. Lightly season both sides with <strong>salt<\/strong> and freshly ground <strong>black pepper.<\/strong><\/p>\n<p>Place the <strong>flour mixture, egg,<\/strong> and <strong>breadcrumbs<\/strong> in 3 separate shallow bowls. Dip the <strong>chops<\/strong> in the <strong>flour,<\/strong> the <strong>egg,<\/strong> and the <strong>breadcrumbs,<\/strong> coating both sides and all edges at each stage. Be careful not to press the <strong>breadcrumbs<\/strong> into the meat. Gently shake off the excess <strong>crumbs.<\/strong> Don&#8217;t let the <strong>schnitzel<\/strong> sit in the <strong>coating<\/strong> or they will not be as crispy once fried &#8211; fry immediately.<\/p>\n<p>Make sure the cooking <strong>oil<\/strong> is hot enough at this point (about 330\u00b0F) as you don&#8217;t want the <strong>Schnitzel<\/strong> to sit around in the coating before frying. Use enough <strong>oil<\/strong> so that the <strong>Schnitzels<\/strong> &#8220;swim&#8221; in it.<\/p>\n<p>Fry the <strong>Schnitzel<\/strong> for about 2-3 minutes on both sides until a deep golden brown.
