{"id":1715,"date":"2018-08-23T16:04:18","date_gmt":"2018-08-23T23:04:18","guid":{"rendered":"http:\/\/nowellfamily.org\/cookbook\/?p=1715"},"modified":"2018-08-23T16:04:18","modified_gmt":"2018-08-23T23:04:18","slug":"skillet-fried-chicken","status":"publish","type":"post","link":"https:\/\/nowellfamily.org\/cookbook\/2018\/08\/23\/skillet-fried-chicken\/","title":{"rendered":"Skillet Fried Chicken"},"content":{"rendered":"<h5 style=\"text-align: center\">Yield: 4 Servings<\/h5>\n<h6 style=\"text-align: center\">Adapted from many<\/h6>\n<p>This is a conglomeration of recipes that makes a good pan-fried chicken.<\/p>\n<ul>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">5-lb chicken, (typical supermarket chicken size)<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">cups white flour<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">tsp salt<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">tsp thyme<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">tsp basil<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">tsp oregano<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp celery salt<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp dried mustard<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">tsp paprika<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp garlic salt<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp ground ginger<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp&nbsp;white pepper<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">cup buttermilk (or 4 TBS buttermilk powder blended in 1 cup water)<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">large egg<\/span><\/li>\n<li><span class=\"id-ingredient-name\">oil (for frying)<\/span><\/li>\n<\/ul>\n<p>Break down the chicken into 10 pieces.&nbsp; I took the breasts off of the bone and then cut them in half.&nbsp; &nbsp;Season chicken well with salt and pepper and leave out at room temperature for 30 to 60 minutes.<\/p>\n<p>Add to a plastic freezer bag, flour and all dry seasonings.&nbsp; Seal bag and shake well to mix.<\/p>\n<p>Whisk egg in a medium bowl. Add buttermilk to bowl and whisk to combine.<\/p>\n<p>Pour oil into a 10&#8243;\u201312&#8243; cast-iron skillet or other heavy straight-sided skillet&nbsp; to a depth of 1\/2&#8243;. Heat over medium-high heat until thermometer registers 350\u00b0F. Meanwhile, set a wire rack inside a large rimmed baking sheet.<\/p>\n<p>Working with 2 to 4 pieces at a time, place chicken in flour bag and shake well to coat pieces.&nbsp; Remove to plate. Repeat for remainder.<\/p>\n<p>Dip chicken in buttermilk mixture, allowing excess to drip back into bowl.&nbsp; Add pieces to flour bag.&nbsp; When you have a few pieces in the bag,&nbsp;seal bag and shake well to mix.&nbsp; Remove pieces to a plate or sheet pan.<\/p>\n<p>Place 5 pieces of chicken in skillet.
