Enjoy a delicious, comforting chicken dish as well as a reminder on how to make cream sauce&#8211;it&#8217;s easier than you thought.<\/p>\n<p>This is an excellent light lunch. Be sure to toast the bread well.<\/p>\n<ul>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">small or 1 huge chicken breast (12- to 16-oz)<\/span><\/li>\n<li><span class=\"id-ingredient-name\">salt to taste<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">TBS butter<\/span><\/li>\n<li><span class=\"id-ingredient-name\">thinly sliced green onions (the lighter parts)<\/span><\/li>\n<li><span class=\"id-ingredient-name\">diced red bell peppers<\/span><\/li>\n<li><span class=\"id-ingredient-name\">diced <strong><span style=\"color: #ff0000;\">jalapeno<\/span> <\/strong>peppers<\/span><\/li>\n<li><span class=\"quantity\">\u00bc<\/span><span class=\"ingredient-name\">cup chicken broth, white wine or water<br \/><\/span><\/li>\n<li><span class=\"quantity\">1\u00bd<\/span><span class=\"ingredient-name\">cups heavy cream<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">TBS cr\u00e8me fraiche or Greek yogurt, optional<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">TBS freshly chopped tarragon<\/span><\/li>\n<li><span class=\"quantity\">2-4<\/span><span class=\"ingredient-name\">thick slices of toasted bread<\/span><\/li>\n<\/ul>\n<p>Cut the <strong>chicken<\/strong> into equal size large slices. Season with <strong>salt.<\/strong> Place in a lightly <strong>buttered<\/strong> skillet over medium-high heat. Brown for a couple of minutes on each side. It doesn\u2019t have to be cooked through. Remove to plate.<\/p>\n<p>Add <strong>green onion<\/strong> and <strong>red<\/strong> and <strong><span style=\"color: #ff0000;\">jalapeno<\/span> peppers<\/strong> to pan and cook for a couple of minutes. Increase heat to medium high and add a little <strong>broth, wine<\/strong> or <strong>water.<\/strong> Cook until almost completely reduced. Add <strong>cream<\/strong> and reduce to desired thickness.<\/p>\n<p>While <strong>sauce<\/strong> is reducing, cube the <strong>par-cooked chicken<\/strong> to even sized cubes (about \u00bd inch).<\/p>\n<p>Add the optional <strong>cr\u00e8me fraiche or yogurt<\/strong> and the <strong>chicken<\/strong> and cook until the <strong>chicken<\/strong> is done (or heated through if precooked).<\/p>\n<p>Season with <strong>salt<\/strong> and <strong>pepper.<\/strong> Add <strong>tarragon,<\/strong> serve over <strong>toast.<\/strong><\/p>\n<p><strong>Notes:<\/strong><\/p>\n<p>Use any variety and amount of <strong>vegetables <\/strong>you prefer.
