{"id":1776,"date":"2018-09-28T11:17:06","date_gmt":"2018-09-28T18:17:06","guid":{"rendered":"http:\/\/nowellfamily.org\/cookbook\/?p=1776"},"modified":"2020-01-21T00:22:52","modified_gmt":"2020-01-21T00:22:52","slug":"cornbread-cast-iron-honey","status":"publish","type":"post","link":"https:\/\/nowellfamily.org\/cookbook\/2018\/09\/28\/cornbread-cast-iron-honey\/","title":{"rendered":"Cornbread, Savory Cast Iron Honey"},"content":{"rendered":"<h5 style=\"text-align: center\">Yield: 6 &#8211; 8 Servings<\/h5>\n<h6 style=\"text-align: center\">Chef John \/ Food Wishes<\/h6>\n<p>I made this today.&nbsp; FWIW, it is not a sweet cornbread which is what I was looking for.&nbsp; Has a good flavor, but not sweet enough for me.<\/p>\n<ul>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">cup melted unsalted butter, divided (half for batter, half for pan)<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">cup cornmeal<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">tsp fine salt<\/span><\/li>\n<li><span class=\"id-ingredient-name\">pinch of cayenne<\/span><\/li>\n<li><span class=\"quantity\">3<\/span><span class=\"ingredient-name\">TBS honey, or to taste<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">large eggs<\/span><\/li>\n<li><span class=\"quantity\">1\u00bd<\/span><span class=\"ingredient-name\">cups buttermilk (or less for a drier texture)<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">cup self-rising flour (1 cup of all-purpose flour, with 2 tsp baking powder, and \u00bd tsp fine salt)<\/span><\/li>\n<\/ul>\n<p>Preheat oven to 400\u00b0F.<\/p>\n<p>Melt butter in 9- or 10-inch cast-iron skillet.<\/p>\n<p>In a mixing bowl, add the cornmeal, salt, cayenne, honey, eggs, buttermilk and half the butter. Give it a whisk to combine.
