Put the <strong>potatoes<\/strong> in a medium pot, cover with cold <strong>water,<\/strong> and bring to a boil. Season the <strong>water<\/strong> with 2 teaspoons of <strong>salt.<\/strong> Once the <strong>water<\/strong> begins to boil, cook the <strong>potatoes<\/strong> for 3 to 4 minutes, until you can stick a fork into them without too much resistance. You want the <strong>potatoes<\/strong> to be almost, but not fully, cooked through so they won&#8217;t fall apart during the next steps.<\/p>\n<p>Drain the <strong>potatoes<\/strong> and put them in a large bowl. Add the <strong>rosemary, olive oil,<\/strong> 1\/2 tsp <strong>salt,<\/strong> and a few grinds of <strong>pepper,<\/strong> and toss until the <strong>potatoes<\/strong> are evenly coated.<\/p>\n<p>Cut the <strong>strips<\/strong>\u00a0<strong>of bacon<\/strong> into thirds. Wrap each <strong>potato bite<\/strong> in a piece of <strong>bacon,<\/strong> securing it with a toothpick. Put the <strong>potatoes<\/strong> on a baking sheet lined with parchment paper or aluminum foil spaced an inch or two apart. You may need to cook the <strong>potatoes<\/strong> in two batches.<\/p>\n<p>Cook the <strong>potatoes<\/strong> for 15 minutes, then flip each piece. Cook for another 15 to 20 minutes, until the <strong>bacon<\/strong> is cooked through and as crisp as you like it. Mix the <strong>sour cream<\/strong> and <span style=\"color: #ff0000;\"><strong>hot sauce<\/strong><\/span> in a small bowl.
