This gets all of the flavor from the scraps and makes them easy to discard.<\/p>\n<ul>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">TBS olive oil<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">large onion chopped<\/span><\/li>\n<li><span class=\"quantity\">3 to 4<\/span><span class=\"ingredient-name\">medium carrots chopped<\/span><\/li>\n<li><span class=\"quantity\">3 to 4<\/span><span class=\"ingredient-name\">stalks celery chopped<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp salt plus more to taste<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">tsp pepper or to taste<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp thyme dry<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp parsley dry<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp oregano dry<\/span><\/li>\n<li><span class=\"quantity\">8<\/span><span class=\"ingredient-name\">cups water<\/span><\/li>\n<li><span class=\"quantity\">4<\/span><span class=\"ingredient-name\">lb chicken scraps, thawed if previously frozen<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">chicken breast<\/span><\/li>\n<li><span class=\"quantity\">2 to 3<\/span><span class=\"ingredient-name\">heaping tsp Better than Bouillon chicken<br \/>\n<\/span><\/li>\n<li><span class=\"quantity\">6<\/span><span class=\"ingredient-name\">oz egg noodles uncooked, (about 2\u00bd cups)<\/span><\/li>\n<li><strong><span class=\"&quot;sect-ingredient-name\">Special Equipment: <\/span><\/strong><span class=\"&quot;sect-ingredient-name\">Instant Pot,\u00a0<\/span><span class=\"&quot;sect-ingredient-name\">Soup Bag\/Soup Sock, available at\u00a0<\/span><a href=\"https:\/\/www.amazon.com\/dp\/B06Y56QT14\/ref=psdc_3737201_t1_B002TJ638I\">Amazon<\/a>.<\/li>\n<\/ul>\n<p><strong><br \/>\nS<\/strong>et Instant Pot to the <strong>HIGH SAUT\u00c9<\/strong> setting.<\/p>\n<p>Add the <strong>olive<\/strong>\u00a0<strong>oil, onion, carrots<\/strong> and <strong>celery, <\/strong>Season with salt and pepper\u00a0and saut\u00e9 for 5 to 8 minutes until the <strong>onion<\/strong> softens and becomes translucent.<\/p>\n<p>Season with <strong>salt<\/strong> and <strong>pepper,<\/strong> add the <strong>thyme, parsley, oregano<\/strong> and stir. Pour in half the <strong>water.<\/strong> Add the <strong>chicken scraps to a soup bag<\/strong> and place in Instant Pot . Add the <strong>chicken breast<\/strong> to the Instant Pot (not in the bag!). Add remaining <strong>water,<\/strong> but do not exceed the MAX FILL line.<\/p>\n<p>Close the lid. Set the Instant Pot to <strong>MANUAL<\/strong> <strong>HIGH<\/strong> pressure for 20 minutes.<\/p>\n<p>Once the Instant Pot cycle is complete, use a quick release. Carefully unlock and remove the lid from the instant pot.<\/p>\n<p>Remove the <strong>chicken breast <\/strong>and set aside. Remove and discard the <strong>chicken scraps in the soup bag<\/strong>.<\/p>\n<p>Dice or shred the <strong>chicken breast<\/strong><\/p>\n<p>Set the Instant Pot to the <strong>HIGH SAUT\u00c9<\/strong> setting again and return to a boil. Add the <strong>Better than Bouillon<\/strong> and mix. Check for <strong>seasoning<\/strong> and adjust.<\/p>\n<p>Add the <strong>noodles<\/strong> to the <strong>soup<\/strong> and cook for 5 to 6 minutes uncovered, until the <strong>noodles<\/strong> are cooked al dente.<\/p>\n<p>Turn off the Instant Pot.
