My usual combination is 4 oz sausage scrambles, 1 green pepper, 1 onion, \u00be cup shredded cheese.<\/p>\n<ul>\n<li><span class=\"quantity\">6<\/span><span class=\"ingredient-name\">eggs<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">cup milk or light cream<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">tsp salt<\/span><\/li>\n<li><span class=\"quantity\">\u00bc<\/span><span class=\"ingredient-name\">tsp pepper<\/span><\/li>\n<li><strong><span class=\"&quot;sect-ingredient-name\">1 of the following meats<\/span><\/strong><\/li>\n<li><span class=\"quantity\">8<\/span><span class=\"ingredient-name\">oz uncased sausage, breakfast, sweet, mild or hot Italian, Chorizo, etc. <\/span><\/li>\n<li><span class=\"quantity\">8<\/span><span class=\"ingredient-name\">slices of cooked bacon (crumbled)<\/span><\/li>\n<li><span class=\"quantity\">8<\/span><span class=\"ingredient-name\">oz ham, diced \u00bc-inch<br \/><\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">TBS vegetable oil<\/span><\/li>\n<li><strong><span class=\"&quot;sect-ingredient-name\">choice of the following vegetables<\/span><\/strong><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">lb potatoes, peeled, diced \u00bc-inch<br \/><\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">green pepper, diced \u00bc-inch<br \/><\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">medium onion, diced \u00bc-inch<br \/><\/span><\/li>\n<li><span class=\"quantity\">8<\/span><span class=\"ingredient-name\">oz mushrooms, cleaned and sliced<\/span><\/li>\n<li><span class=\"quantity\">4<\/span><span class=\"ingredient-name\">oz spinach, chopped.<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">to 1 cup shredded cheddar, Colby jack, pepper jack, etc.<\/span><\/li>\n<li><span class=\"id-ingredient-name\">salt and freshly ground pepper<\/span><\/li>\n<li><span class=\"id-ingredient-name\">cooking spray<\/span><\/li>\n<\/ul>\n<p><strong><br \/>In<\/strong> a bowl whisk together <strong>eggs, salt, pepper,<\/strong> and <strong>milk.<\/strong> Set aside.<\/p>\n<p>Cook the <strong>meat<\/strong> as needed. Drain.<\/p>\n<p>Cook the <strong>vegetables<\/strong> as needed, <strong>potatoes<\/strong> boiled in <strong>salted water<\/strong> until tender, <strong>onion<\/strong> and <strong>peppers<\/strong> in 1 TBS <strong>oil<\/strong> until soft and lightly browned, <strong>mushrooms<\/strong> saut\u00e9ed until brown, spin<strong>a<\/strong>ch until just wilted. Drain.<\/p>\n<p>Preheat oven to 350\u00b0F.<\/p>\n<p>Spray a large 6 cup muffin pan with <strong>cooking spray.<\/strong><\/p>\n<p>Divide the <strong>meat, vegetables<\/strong> and <strong>cheese<\/strong> into the muffin cups.<\/p>\n<p>Pour <strong>egg mixture<\/strong> into each cup until \u00bd to \u00be full and stir gently to combine.<\/p>\n<p>Transfer to a baking sheet and top with any remaining <strong>cheese.<\/strong><\/p>\n<p>Bake cupcakes at 350\u00b0F for 18 to 25 minutes.<\/p>\n<p>The <strong>eggs<\/strong> will puff up and get nice and light.<\/p>\n<p class=\"Body\">These keep 2-3 days in the refrigerator or you can freeze <strong>breakfast cupcakes<\/strong> for up to one month.<\/p>\n\n\n<p><\/p>\n","protected":false},"excerpt":{"rendered":"<p>Yield: 6 Servings Scott Nowell I based this on a combination of something I saw on TV while waiting for a tire repair and the \u201cJust Crack an Egg\u201d from the supermarket.
