We think it&#8217;s the best thing you can do with those magical chicken fat drippings!<\/p>\n<ul>\n<li><span class=\"quantity\">6<\/span><span class=\"ingredient-name\">bone-in skin-on chicken thighs<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">tsp freshly chopped thyme<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp paprika<\/span><\/li>\n<li><span class=\"id-ingredient-name\">Kosher salt<\/span><\/li>\n<li><span class=\"id-ingredient-name\">freshly ground black pepper<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">TBS extra-virgin olive oil<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">cloves garlic, sliced<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">cup chicken broth or water<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">sprigs fresh thyme<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">TBS all-purpose flour<\/span><\/li>\n<\/ul>\n<p>Season chicken all over with chopped thyme, paprika, salt, and pepper. Set Instant Pot to Saut\u00e9 setting.<\/p>\n<p>Add oil to pot and add thighs skin-side down. Cook, in batches if needed, until golden and crisp, 3 to 5 minutes, then flip and cook 3 minutes more. Remove chicken from pot.<\/p>\n<p>Add garlic to pot and cook until fragrant, 1 minute. Add water or chicken broth and thyme sprigs, and use a wooden spoon to scrape the brown bits off the bottom of the pot.<\/p>\n<p>Fit Instant Pot with trivet and place thighs skin side up. Secure lid and press the manual setting. Cook on high for 12 minutes and then naturally release pressure.<\/p>\n<p>Carefully remove thighs and trivet. Place back on Saut\u00e9 mode. Whisk 3 tablespoons of the hot broth (or water) into flour until smooth, then pour back into pot. Bring up to a simmer and cook until gravy has thickened slightly, about 7 minutes. Remove thyme sprigs and season to taste with salt and pepper.<\/p>\n<p>Serve thighs with gravy.<\/p>\n<p><strong>Note:<\/strong><\/p>\n<p>If using newer versions of Instant Pot, especially 8-quart capacity models, we recommend removing the inner pot and letting it cool off for 5 to 10 minutes before moving on to the pressure cooking stage.
