And it\u2019s a hit every time.<\/p>\n<p><strong>Crust:<\/strong><\/p>\n<ul>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">lb unsalted butter, at room temperature <\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">cup granulated sugar <\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">cups flour <\/span><\/li>\n<li><span class=\"quantity\">1\/8<\/span><span class=\"ingredient-name\">tsp kosher salt <\/span><\/li>\n<\/ul>\n<p><strong>Filling:<\/strong><\/p>\n<ul>\n<li><span class=\"quantity\">6<\/span><span class=\"ingredient-name\">extra-large eggs at room temperature <\/span><\/li>\n<li><span class=\"quantity\">3<\/span><span class=\"ingredient-name\">cups granulated sugar <\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">TBS grated lemon zest (4 to 6 lemons) <\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">cup freshly squeezed lemon juice <\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">cup flour <\/span><\/li>\n<li><span class=\"id-ingredient-name\">confectioners&#8217; sugar, for dusting<\/span><\/li>\n<\/ul>\n<p><strong><br \/>\nPreheat<\/strong> the oven to 350\u00b0F.<\/p>\n<p><strong>For the crust:<\/strong><\/p>\n<p>Cream the <strong>butter<\/strong> and <strong>sugar<\/strong> until light in the bowl of an electric mixer fitted with the paddle attachment.<\/p>\n<p>Combine the <strong>flour<\/strong> and <strong>salt<\/strong> and, with the mixer on low, add to the <strong>butter<\/strong> until just mixed.<\/p>\n<p>Dump the <strong>dough<\/strong> onto a well-floured board and gather into a ball. Flatten the <strong>dough<\/strong> with <strong>floured<\/strong> hands and press it into a 9 by 13 by 2-inch baking sheet, building up a \u00bd-inch edge on all sides. Chill.<\/p>\n<p>Bake the <strong>crust<\/strong> for 15 to 20 minutes, until very lightly browned. Let cool on a wire rack. Leave the oven on.<\/p>\n<p><strong>For the filling: <\/strong><\/p>\n<p>Whisk together the <strong>eggs, sugar, lemon zest, lemon juice,<\/strong> and <strong>flour.<\/strong> Pour over the <strong>crust<\/strong> and bake for 30 to 35 minutes, until the <strong>filling<\/strong> is set.
