{"id":2079,"date":"2019-07-01T15:23:26","date_gmt":"2019-07-01T22:23:26","guid":{"rendered":"http:\/\/nowellfamily.org\/cookbook\/?p=2079"},"modified":"2024-04-09T14:57:52","modified_gmt":"2024-04-09T14:57:52","slug":"chicken-chop-suey","status":"publish","type":"post","link":"https:\/\/nowellfamily.org\/cookbook\/2019\/07\/01\/chicken-chop-suey\/","title":{"rendered":"Chicken Chop Suey"},"content":{"rendered":"<h5 style=\"text-align: center;\">Yield: 4 Servings<\/h5>\n<h6 style=\"text-align: center;\">Adapted from Wolfe Pit<\/h6>\n<p>2019: I don&#8217;t think I&#8217;ve had chop suey since I was a kid.\u00a0 It was time and the urge struck, so here it is.\u00a0 Probably only vaguely resembles the La Choy version that came in a can, but that&#8217;s likely a good thing.\u00a0 This was quite good.<\/p>\n<p><strong><span class=\"&quot;sect-ingredient-name\">Chicken &amp; Marinade<\/span><\/strong><\/p>\n<ul>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">lb cubed leftover rotisserie chicken<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp Shaoxing Chinese wine or dry Sherry<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">tsp oyster sauce<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">tsp corn starch<\/span><\/li>\n<\/ul>\n<p><strong><span class=\"&quot;sect-ingredient-name\">Vegetables &amp; sauce<\/span><\/strong><\/p>\n<ul>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">TBS vegetable oil<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">tsp garlic, minced<\/span><\/li>\n<li><span class=\"quantity\">4<\/span><span class=\"ingredient-name\">celery stalks, sliced thin on sharp diagonal<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">bell pepper, sliced thin<\/span><\/li>\n<li><span class=\"quantity\">3-4<\/span><span class=\"ingredient-name\">scallions, sliced thin, white and green parts separately<\/span><\/li>\n<li><span class=\"quantity\">12<\/span><span class=\"ingredient-name\">snow peas, trimmed and cut in half on diagonal<\/span><\/li>\n<li><span class=\"quantity\">\u00bc<\/span><span class=\"ingredient-name\">cup carrots, julienned<\/span><\/li>\n<li><span class=\"quantity\">8<\/span><span class=\"ingredient-name\">oz bean sprouts<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">tsp salt<\/span><\/li>\n<li><span class=\"quantity\">\u00bc<\/span><span class=\"ingredient-name\">tsp white pepper<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">cup chicken broth<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">TBS oyster sauce<\/span><\/li>\n<\/ul>\n<p><strong>Slurry<\/strong><\/p>\n<ul>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">TBS cornstarch<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">TBS water<\/span><\/li>\n<\/ul>\n<p><strong><br \/>\nPreparation:<\/strong><\/p>\n<p>This cooks fast so you need everything cut, measured and ready to cook before heating the wok or skillet.<\/p>\n<p><strong>Marinate chicken: <\/strong><\/p>\n<p>Combine <strong>chicken, wine, oyster sauce<\/strong> and <strong>cornstarch<\/strong> together, marinade for 15 minutes<\/p>\n<p><strong>Make Slurry: <\/strong><\/p>\n<p>Mix <strong>cornstarch<\/strong> and <strong>water<\/strong> to form slurry.<\/p>\n<p><strong>Stir Fry:<\/strong><\/p>\n<p>Heat a large skillet or wok over medium high heat. Add <strong>cooking oil<\/strong> and spread around.<\/p>\n<p>Add <strong>chicken<\/strong> and <strong>garlic<\/strong> to wok. Stir fry for 1 minute.<\/p>\n<p>Add the <strong>white<\/strong> section of the <strong>green onions<\/strong>, <strong>bell pepper<\/strong>, <strong>snow peas<\/strong> and <strong>carrots<\/strong> and stir fry for 2 minutes.<\/p>\n<p>Add the <strong>bean sprouts,<\/strong> \u00bc tsp <strong>white pepper,<\/strong> cup of <strong>chicken broth<\/strong> and 2 TBS <strong>oyster sauce <\/strong>and bring to a light boil.<\/p>\n<p>Add <strong>cornstarch slurry<\/strong>, stir until thickened.<\/p>\n<p>Top with <strong>green part of the scallions.<\/strong><\/p>\n<p>Serve with <strong>steamed rice<\/strong> and\/or <strong>chow mein noodles.<\/strong><\/p>\n","protected":false},"excerpt":{"rendered":"<p>Yield: 4 Servings Adapted from Wolfe Pit 2019: I don&#8217;t think I&#8217;ve had chop suey since I was a kid.\u00a0 It was time and the urge struck, so here it is.\u00a0 Probably only vaguely resembles the La Choy version that came in a can, but that&#8217;s likely a good thing.\u00a0 This was quite good.
