Add the <strong>rice<\/strong> and cook, stirring constantly, until lightly golden-brown and aromatic, 3 to 4 minutes. Add the <strong>water,<\/strong> \u00bd cup of the <strong>cilantro,<\/strong> and <strong>salt.<\/strong> Stir to combine and bring to a boil over high heat.<\/p>\n<p>Cover the saucepan and reduce the heat to low and cook for 16 minutes. Remove the saucepan from the heat and let the <strong>rice<\/strong> steam, still covered, for 10 minutes. Meanwhile, <strong>juice<\/strong> the <strong>lime<\/strong> until you have 2 TBS.<\/p>\n<p>Uncover and fluff the <strong>rice<\/strong> with a fork. Add the remaining <strong>cilantro<\/strong> and <strong>lime juice<\/strong> and stir to combine.
