{"id":2884,"date":"2020-01-25T19:05:35","date_gmt":"2020-01-25T19:05:35","guid":{"rendered":"http:\/\/nowellfamily.org\/cookbook\/?p=2884"},"modified":"2023-10-19T17:33:03","modified_gmt":"2023-10-19T17:33:03","slug":"shepherds-pie","status":"publish","type":"post","link":"https:\/\/nowellfamily.org\/cookbook\/2020\/01\/25\/shepherds-pie\/","title":{"rendered":"Shepherd\u2019s Pie"},"content":{"rendered":"<h5 style=\"text-align: center;\">Yield: 4 to 6 Servings<\/h5>\n<h6 style=\"text-align: center;\">Food Wishes<\/h6>\n<p>24-Oct-16 &#8211; You can substitute beef for lamb, if you must, but then it&#8217;s Cottage Pie.<\/p>\n<p><strong>For lamb\/beef mixture:<\/strong><\/p>\n<ul>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">TBS butter<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">TBS olive oil<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">diced onion<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">lb lean ground lamb\/lamb<\/span><\/li>\n<li><span class=\"quantity\">\u2153<\/span><span class=\"ingredient-name\">cup flour<\/span><\/li>\n<li><span class=\"id-ingredient-name\">salt and pepper to taste<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp paprika<\/span><\/li>\n<li><span class=\"quantity\">1\/8<\/span><span class=\"ingredient-name\">tsp cinnamon<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">tsp minced fresh rosemary<\/span><\/li>\n<li><span class=\"quantity\">3<\/span><span class=\"ingredient-name\">cloves minced garlic<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">TBS ketchup<\/span><\/li>\n<li><span class=\"quantity\">2\u00bd<\/span><span class=\"ingredient-name\">cups water or broth (use more or less to adjust thickness as needed)<\/span><\/li>\n<li><span class=\"quantity\">12<\/span><span class=\"ingredient-name\">oz bag frozen peas and carrots, thawed, drained well<\/span><\/li>\n<\/ul>\n<p><strong>For the potato topping:<\/strong><\/p>\n<ul>\n<li><span class=\"quantity\">2\u00bd<\/span><span class=\"ingredient-name\">lb Yukon gold potatoes<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">TBS butter<\/span><\/li>\n<li><span class=\"id-ingredient-name\">salt and pepper to taste<\/span><\/li>\n<li><span class=\"id-ingredient-name\">pinch of cayenne<\/span><\/li>\n<li><span class=\"quantity\">\u00bc<\/span><span class=\"ingredient-name\">cup cream cheese<\/span><\/li>\n<li><span class=\"quantity\">\u00bc<\/span><span class=\"ingredient-name\">lb Irish cheddar like Dubliner.<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">egg yolk beaten with 2 TBS milk<\/span><\/li>\n<\/ul>\n<p><strong><br \/>\nPreheat<\/strong> oven to 375\u00b0F.<\/p>\n<p>Add <strong>olive oil<\/strong> and <strong>onion<\/strong> to Dutch oven over medium heat. Add <strong>meat,<\/strong> break up with wooden spoon while it cooks. Cook and stir for about 10 minutes to develop fond on bottom of pan.<\/p>\n<p>Sprinkle on <strong>flour.<\/strong> Mix and cook for 3 to 4 minutes. While it\u2019s cooking add <strong>salt<\/strong> and <strong>pepper, paprika, cinnamon, rosemary, garlic<\/strong> and <strong>ketchup.<\/strong> Stir in.<\/p>\n<p>Add <strong>water,<\/strong> stir until quite thick. Cook for about 5-6 minutes.<\/p>\n<p>Add the frozen <strong>peas<\/strong> and <strong>carrots,<\/strong> stir, cook. Add to baking dish, tap down and spread smooth.<\/p>\n<p>Boil <strong>potatoes<\/strong> and cook until tender. Drain, add <strong>butter, salt<\/strong> and <strong>pepper, cayenne, cream cheese, cheddar.<\/strong> Mash until thoroughly incorporated.<\/p>\n<p>Beat <strong>egg yolk<\/strong> with <strong>milk<\/strong> and stir into <strong>mashed potatoes.<\/strong><\/p>\n<p>Top <strong>meat<\/strong> in big spoonful\u2019s of mashed potato.
