You can skip the dark soy sauce if you want a lighter colored finished dish.<\/p>\n<p><strong> Sauce pre-mix:<\/strong><\/p>\n<ul>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">TBS hot water<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">tsp honey<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">tsp sesame oil<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">tsp Shaoxing wine (or dry cooking sherry)<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">TBS soy sauce<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">tsp dark soy sauce (skip for lighter colored dish)<\/span><\/li>\n<li><span class=\"quantity\">\u00bc-\u00bd<\/span><span class=\"ingredient-name\">tsp white pepper<\/span><\/li>\n<\/ul>\n<p><strong>Protein:<\/strong><\/p>\n<ul>\n<li><span class=\"quantity\">\u00bd-1<\/span><span class=\"ingredient-name\">lb protein: large shrimp, raw, de-shelled, pork, beef or chicken sliced thin, char siu, bacon or mix<br \/><\/span><\/li>\n<li><span class=\"quantity\">2-4<\/span><span class=\"ingredient-name\">eggs, scrambled<\/span><\/li>\n<\/ul>\n<p><strong>Rice &amp; vegetables:<\/strong><\/p>\n<ul>\n<li><span class=\"quantity\">4-5<\/span><span class=\"ingredient-name\">cups cooked rice<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">cups cooked vegetables, broccoli, carrots, etc.<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">cup bean sprouts, optional<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">cup snow or sugar snap pea pods, trimmed and sliced on the diagonal, optional<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">medium onion chopped<\/span><\/li>\n<li><span class=\"quantity\">3-4<\/span><span class=\"ingredient-name\">green onions (scallions), white and green sections separated, white chopped into 3\/8\u201d rings, green into \u00be\u201d pieces<\/span><\/li>\n<li><span class=\"quantity\">2-4<\/span><span class=\"ingredient-name\">TBS oil, divided<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp sugar<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">tsp soy sauce<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">tsp oyster sauce or 1 tsp sesame oil<\/span><\/li>\n<li><span class=\"ingredient-name\">Kosher salt and freshly ground pepper<\/span><\/li>\n<\/ul>\n<p><span style=\"color: #ff0000;\"><strong><em><br \/>Mise, Mise, Mise, get your mise together!<\/em><\/strong><\/span><strong><em> This means me! This happens so fast, that you must get everything prepped and measured before cooking starts.<\/em><\/strong><\/p>\n<p><strong>Sauce premix:<\/strong><br \/>Start by combining the hot <strong>water<\/strong>, <strong>honey<\/strong>, <strong>sesame oil<\/strong>, <strong>Shaoxing wine<\/strong> (if using), <strong>soy sauce<\/strong>, <strong>dark soy sauce<\/strong> (if using), and <strong>white pepper<\/strong> in a small bowl. This is the <strong>sauce<\/strong> that you\u2019ll be adding to the <strong>rice<\/strong>, and it\u2019s much easier to have it combined and ready to go before you start cooking.<\/p>\n<p><strong>Stir fry protein &amp; onion:<\/strong><br \/>With the wok over medium heat, add a TBS of <strong>oil<\/strong> and <strong>eggs<\/strong>. Scramble until just set. Remove to bowl, set aside.<br \/>With the wok over medium heat, add a TBS of <strong>oil<\/strong> and stir-fry the <strong>onions<\/strong> and <strong>white part of the <span class=\"ingredient-name\">scallions<\/span><\/strong>\u00a0until translucent and then stir in the <strong>protein<\/strong>. Stir-fry until <strong>chicken<\/strong> or <strong>pork<\/strong> are cooked through. If using <strong>shrimp<\/strong>, stir-fry for a couple minutes and remove to a bowl. Add 2 TBS of <strong>oil<\/strong> and the <strong>rice<\/strong> and stir-fry until heated through.<\/p>\n<p><strong>Add sauce:<\/strong><\/p>\n<p>Add the <strong>premix sauce<\/strong> and <strong>salt<\/strong> and mix with a scooping motion until the <strong>rice<\/strong> is evenly coated with <strong>sauce<\/strong>. You will have to break up any remaining clumps of <strong>rice<\/strong> with the spatula as best as possible, but no need to be obsessive. The <strong>rice<\/strong> should be hot by this time.<\/p>\n<p>Toss in your <strong>bean sprouts<\/strong>, <strong>pea pods<\/strong>, <strong>scrambled<\/strong> eggs and return <strong>shrimp<\/strong> (if using).
