New sauce.<\/p>\n<p>This is a traditional soft noodle style of Lo Mein.<\/p>\n<ul>\n<li><span class=\"quantity\">12<\/span><span class=\"ingredient-name\">oz shrimp (31-40 size, peeled and deveined)<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">egg white<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">pinch salt<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">pinch white pepper<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">tsp sesame seed oil<\/span><\/li>\n<li><span class=\"quantity\">1\u00bd<\/span><span class=\"ingredient-name\">TBS corn starch<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">TBS oil<\/span><\/li>\n<\/ul>\n<p><strong>Sauce:<\/strong><\/p>\n<ul>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">tsp sugar<\/span><\/li>\n<li><span class=\"quantity\">1\u00bd<\/span><span class=\"ingredient-name\">TBS soy sauce<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">tsp dark soy sauce<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">TBS oyster sauce<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">tsp sesame oil<\/span><\/li>\n<li><span class=\"quantity\">\u215b<\/span><span class=\"ingredient-name\">tsp ground white pepper<\/span><\/li>\n<\/ul>\n<p><strong>Noodles &amp; Vegetables:<\/strong><\/p>\n<ul>\n<li><span class=\"id-ingredient-name\">vegetable oil, as needed<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">lb fresh lo mein noodles<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">cloves garlic, minced<\/span><\/li>\n<li><span class=\"quantity\">6<\/span><span class=\"ingredient-name\">fresh button or Cremini mushrooms, sliced<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">medium carrot, julienned<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">cup bamboo shoots, sliced<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">cup water chestnuts, sliced<\/span><\/li>\n<\/ul>\n<p><strong>Stir-fry:<\/strong><\/p>\n<ul>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">TBS Shaoxing wine<\/span><\/li>\n<li><span class=\"quantity\">3<\/span><span class=\"ingredient-name\">cups Napa cabbage, shredded<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">cup snow peas, trimmed<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">cup fresh mung bean sprouts<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">scallions, split and cut into 2-inch-long pieces<\/span><\/li>\n<\/ul>\n<p><strong><br \/>\nMarinating the Shrimp:<\/strong><\/p>\n<p>In a bowl, add the <strong>shrimp, egg white, salt,<\/strong> 1 pinch <strong>white pepper,<\/strong> 1 tsp <strong>sesame oil<\/strong> and mix. Add <strong>cornstarch<\/strong> and mix until well coated. Mix in about a TBS of <strong>cooking oil,<\/strong> mix and set aside.<\/p>\n<p><strong>Boiling the Noodles:<\/strong><\/p>\n<p>In a wok or 6 qt pot add your <strong>noodles<\/strong> to boiling <strong>water<\/strong> until the <strong>noodles<\/strong> are submerged and boil on high heat for 2 to 3 minutes. Strain and mix into <strong>ice water.<\/strong> When <strong>chilled,<\/strong> drain and set aside.<\/p>\n<p><strong>Premix sauce:<\/strong><\/p>\n<p>Combine the <strong>sugar, soy sauces, oyster sauce, sesame oil,<\/strong> and <strong>white pepper<\/strong> in a bowl until the <strong>sugar<\/strong> is dissolved and set aside.<\/p>\n<p><strong>Stir-fry shrimp:<\/strong><\/p>\n<p>Heat a large wok over high heat until it just starts to smoke and add 1 TBS of <strong>cooking oil<\/strong> around the perimeter of the wok. Quickly spread the <strong>shrimp<\/strong> around your wok and let them sear for 10-15 seconds on each side. Immediately transfer the <strong>shrimp<\/strong> to a plate and set aside.<\/p>\n<p><strong>Vegetables:<\/strong><\/p>\n<p>Return the wok to the highest heat possible and add 2 TBS <strong>oil,<\/strong> along with the <strong>garlic.<\/strong> After a few seconds, add the <strong>mushrooms, carrots, bamboo shoots,<\/strong> and <strong>water chestnuts<\/strong> and stir-fry for 30 seconds.<\/p>\n<p><strong>Cabbage &amp; noodles:<\/strong><\/p>\n<p>Next, spread the <strong>Shaoxing<\/strong>\u00a0wine around the perimeter of the wok, and then add the <strong>Napa cabbage.<\/strong> Stir-fry for another 30 seconds. Spread the <strong>noodles<\/strong> evenly over the <strong>vegetables<\/strong> and give everything a good stir for 1 minute.<\/p>\n<p><strong>Sauce:<\/strong><\/p>\n<p>At this point, the <strong>noodles<\/strong> should be tender, so add in the <strong>sauce<\/strong> mixture you set aside earlier and mix until everything is combined. Stir-fry for another 30 seconds using a scooping motion, until the <strong>sauce<\/strong> is well distributed.<\/p>\n<p><strong>Finish:<\/strong><\/p>\n<p>Add in the <strong>shrimp, snow peas, bean sprouts,<\/strong> and <strong>scallions.<\/strong> Mix well for another 2 minutes and serve!<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Yield: 2 Servings Adapted from multiple sources Second try.
