{"id":3179,"date":"2020-06-18T23:15:38","date_gmt":"2020-06-18T23:15:38","guid":{"rendered":"http:\/\/nowellfamily.org\/cookbook\/?p=3179"},"modified":"2026-03-23T15:59:21","modified_gmt":"2026-03-23T15:59:21","slug":"chicken-pea-pods","status":"publish","type":"post","link":"https:\/\/nowellfamily.org\/cookbook\/2020\/06\/18\/chicken-pea-pods\/","title":{"rendered":"Chicken Snow or Sugar Snap Peas"},"content":{"rendered":"<h5 style=\"text-align: center;\">Yield: 2 to 3 Servings<\/h5>\n<h6 style=\"text-align: center;\"><strong>Adapted from:<\/strong> <a href=\"https:\/\/sueandgambo.com\/pages\/chicken-peapods-stir-fry\">Sue &amp; Gambo<\/a><\/h6>\n<p>A very simple clean tasting stir fry made with snow peas or sugar snap peas and chicken with a delightful white sauce. \ud83d\ude0a \ud83d\ude0a<\/p>\n<p><strong>Chicken &amp; Marinade:<\/strong><\/p>\n<ul>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">lb chicken<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">tsp salt<\/span><\/li>\n<li><span class=\"id-ingredient-name\">pinch white pepper (optional, substitute black)<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp of sesame oil<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">egg white<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">TBS of corn starch<\/span><\/li>\n<li><span class=\"quantity\">2-3<\/span><span class=\"ingredient-name\">TBS of oil, divided<\/span><\/li>\n<\/ul>\n<p><strong>Vegetables:<\/strong><\/p>\n<ul>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">cups of snow peas or sugar snap peas, strings removed<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">cup of white onion, sliced<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp minced garlic<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp minced ginger<\/span><\/li>\n<\/ul>\n<p><strong>Sauce:<\/strong><\/p>\n<ul>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">TBS Shaoxing cooking wine<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">cup of stock<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">TBS of oyster sauce<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp of sugar<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">tsp sesame oil<\/span><\/li>\n<\/ul>\n<p><strong>Slurry<\/strong><\/p>\n<ul>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">TBS of corn starch<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">TBS of water<\/span><\/li>\n<\/ul>\n<p><strong><br \/>\nPrep:<\/strong><br \/>\nSlice up the <strong>chicken<\/strong> into small strips.<br \/>\n<strong>Marinate the chicken:<\/strong> Place the <strong>chicken<\/strong> in a bowl, add <strong>salt, white pepper, sesame<\/strong> <strong>oil<\/strong>, <strong>egg white<\/strong> and mix.\u00a0 Add 1\u00bd-2 tablespoons <strong>cornstarch,<\/strong> mix. Add 1-2 tablespoons of <strong>oil,<\/strong> mix.<\/p>\n<p><strong>Make the sauce:<\/strong><br \/>\nIn another small bowl, add <span class=\"ingredient-name\"><strong>Shaoxing<\/strong> <\/span><strong>cooking wine,<\/strong> \u00bd cup of <strong>stock<\/strong>, 1 TBS <strong>oyster sauce,<\/strong> 1 teaspoon of <strong>sugar,<\/strong> \u00bd teaspoon <strong>sesame<\/strong> <strong>oil.<\/strong> Mix well.<\/p>\n<p><strong>Make a slurry:<\/strong><br \/>\nWhisk together 1 tablespoon of <strong>cornstarch<\/strong> and 2 tablespoons of <strong>water<\/strong> in a bowl<\/p>\n<p><strong>Stir Fry:<\/strong><br \/>\nHeat a wok over high heat. Add 2 tablespoons of <strong>oil<\/strong> and when oil is smoking, reduce heat to medium. Add <strong>chicken<\/strong> and cook until <strong>chicken<\/strong> is fully cooked through. Remove, drain and set the <strong>chicken<\/strong> aside.<\/p>\n<p>Add 1 tablespoon of <strong>oil<\/strong> and the <strong>white onions<\/strong> to the wok, stir fry for 30 seconds, add minced <strong>ginger,<\/strong> minced <strong>garlic<\/strong> and stir-fry for 15-30 seconds.<\/p>\n<p>Next add all the <strong>pea pods.<\/strong> Stir fry for 30 seconds.<\/p>\n<p>Add <strong>sauce<\/strong> mix and bring to a boil. Mix well. Cook for about 30 seconds.<\/p>\n<p>To thicken the <strong>sauce,<\/strong> slowly add <strong>slurry<\/strong> and bring to a boil.
