Served with a side of buttered noodles, and saut\u00e9ed sugar snap peas.<\/p>\n<ul>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">large pork tenderloin (about 1 lb)<\/span><\/li>\n<li><span class=\"id-ingredient-name\">Salt and pepper<\/span><\/li>\n<li><span class=\"quantity\">6<\/span><span class=\"ingredient-name\">oz noodles<\/span><\/li>\n<li><span class=\"quantity\">8<\/span><span class=\"ingredient-name\">oz sugar snap peas<\/span><\/li>\n<li><span class=\"quantity\">5<\/span><span class=\"ingredient-name\">TBS unsalted butter<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">garlic cloves, minced<\/span><\/li>\n<li><span class=\"quantity\">\u00be<\/span><span class=\"ingredient-name\">cup low-sodium chicken broth<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">TBS lemon juice<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp brown sugar<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">TBS finely chopped fresh parsley <\/span><\/li>\n<\/ul>\n<p><strong>Prep:<\/strong><\/p>\n<p>Rinse and dry the produce.<\/p>\n<p>Remove silver-skin from <strong>pork tenderloin.<\/strong> Cut into 4 equal pieces and pound \u00bc inch thick.<\/p>\n<p>Remove the tips and any strings that come off of the <strong>sugar snap peas<\/strong>.<\/p>\n<p><strong>Zest<\/strong> and <strong>juice lemon.<\/strong><\/p>\n<p><strong>Noodles:<\/strong><\/p>\n<p>Bring a gallon of <strong>water<\/strong> to a boil, add 1 TBS <strong>salt,<\/strong> stir and add <strong>noodles.<\/strong> Cook using package directions.<\/p>\n<p>Reserve 1\/2 cup <strong>pasta cooking water<\/strong> and drain <strong>noodles.<\/strong><\/p>\n<p>Add 1 TBS <strong>butter<\/strong> or <strong>olive oil<\/strong> and mix. Set aside.<\/p>\n<p><strong>Cutlets:<\/strong><\/p>\n<p>Pat <strong>pork cutlets<\/strong> dry with paper towels and season both sides with <strong>salt<\/strong> and <strong>pepper.<\/strong><\/p>\n<p>Melt 1 TBS <strong>butter<\/strong> and a small amount of oil in large skillet over medium heat. Cook 2 <strong>cutlets<\/strong> until golden brown and cooked through, 1 to 2 minutes per side. Transfer to platter and tent with foil. Repeat with additional 1 tablespoon <strong>butter<\/strong> and remaining <strong>cutlets.<\/strong><\/p>\n<p><strong>Sugar Snap Peas:<\/strong><\/p>\n<p>Add 1 TBS butter to a medium skillet and heat over medium heat. Add <strong>sugar snap peas, lemon zest<\/strong> and a pinch of <strong>salt<\/strong> and <strong>pepper.<\/strong> Saut\u00e9\u00a0until lightly browned, 2 to 3 minutes. Remove from heat.<\/p>\n<p><strong>Sauce:<\/strong><\/p>\n<p>Add <strong>garlic<\/strong> and additional 1 TBS <strong>butter<\/strong> to empty <strong>pork<\/strong> skillet and cook until fragrant, about 30 seconds.<\/p>\n<p>Stir in 3\/4 cup <strong>broth, <\/strong>2 TBS <strong>lemon juice,<\/strong> 1 tsp <strong>brown sugar,<\/strong> and any accumulated <strong>pork juices<\/strong> and simmer until slightly thickened, about 5 minutes.<\/p>\n<p>Off heat, whisk in <strong>parsley<\/strong> and remaining <strong>butter.<\/strong><\/p>\n<p><strong>Serve:<\/strong><\/p>\n<p>Divide <strong>noodles, pork cutlets<\/strong> and <strong>peas<\/strong> between plates.
