When it\u2019s sweater weather, it\u2019s time for this creamy fish chowder recipe.<\/p>\n<ul>\n<li><span class=\"quantity\">4<\/span><span class=\"ingredient-name\">oz slab bacon, sliced bacon, or salt pork, chopped<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">TBS unsalted butter<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">large onion, finely chopped<\/span><\/li>\n<li><span class=\"quantity\">4<\/span><span class=\"ingredient-name\">celery stalks with leaves, finely chopped<\/span><\/li>\n<li><span class=\"id-ingredient-name\">Kosher salt, freshly ground pepper<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">large Yukon Gold potatoes (about 1 lb), peeled, cut into \u00bd&#8221; pieces<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">cup clam juice or fish broth<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">TBS fresh thyme leaves<\/span><\/li>\n<li><span class=\"quantity\">1\u00bd<\/span><span class=\"ingredient-name\">lb skinless cod, haddock, or pollock fillets, cut into 2&#8243; pieces<\/span><\/li>\n<li><span class=\"quantity\">4<\/span><span class=\"ingredient-name\">cups half-and-half<\/span><\/li>\n<\/ul>\n<p>Cook bacon in a large Dutch oven or other heavy pot over medium heat, stirring often, until brown but not crisp, for 8\u201310 minutes. Transfer bacon with a slotted spoon to paper towels.<\/p>\n<p>Add butter, onion, and celery to drippings in pot. Season with salt and pepper. Cook, stirring occasionally, until onion and celery are soft, for 5\u20138 minutes.<\/p>\n<p>Add potatoes, clam juice, thyme, and 1 cup water. Bring to a boil, reduce heat, and simmer until potatoes are tender, for 10\u201315 minutes.<\/p>\n<p>Season fish with salt and pepper and place on top of potatoes. Cover pot and cook (liquid should be barely simmering at this point) until fish is opaque throughout, for 5\u20137 minutes (thicker pieces will take longer to cook). Add half-and-half and return to a simmer (at this point, fish will break into smaller pieces); season with salt and pepper just before serving.<\/p>\n<p><strong>DO AHEAD:<\/strong> Chowder can be made 2 days ahead.
