It is rare to find pork stock\/broth in the supermarket. You can fake it by mixing beef and chicken stock in equal portions. You will get compliments on the gravy and no one will know it isn&#8217;t pork. It is a very common method used in diners and restaurants.<\/p>\n<ul>\n<li><span class=\"quantity\">3<\/span><span class=\"ingredient-name\">TBS butter<\/span><\/li>\n<li><span class=\"quantity\">3<\/span><span class=\"ingredient-name\">TBS AP flour<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">cups water<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">heaping tsp Better Than Bouillon Chicken<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">heaping tsp Better Than Bouillon Beef<\/span><\/li>\n<\/ul>\n<p>If you are cooking some <strong>pork,<\/strong> when done, pour the <strong>pan juices<\/strong> and fat into a heat proof measuring cup.<\/p>\n<p>Skim off the <strong>fat<\/strong> off the measuring cup and put it in a small sauce pan.<\/p>\n<p>Place the sauce pan over medium heat and add enough <strong>butter<\/strong> to equal 3 TBS combined with the <strong>pork fat.<\/strong> When the <strong>butter<\/strong> is melted and stops foaming, add <strong>flour<\/strong> and whisk to make a <strong>roux.<\/strong> Cook for 2 to 3 minutes.<\/p>\n<p>Add <strong>water, chicken bouillon<\/strong> and <strong>beef bouillon<\/strong> to the measuring cup to make 1 cup. Pour the <strong>water<\/strong> mixture and a second cup of <strong>water<\/strong> into the hot <strong>roux<\/strong> and mix well. Bring to a boil and stir until thickened.
