So, why try? Because, if and when you pull this off, you&#8217;ll be enjoying one of the greatest chicken experiences of your life. It&#8217;s also one of the greatest garlic experiences of your life, as well as one of the greatest butter experiences of your life.&#8221;<\/p>\n<ul>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">cloves garlic, minced<\/span><\/li>\n<li><span class=\"id-ingredient-name\">salt &amp; pepper<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">TBS chopped fresh flat-leaf parsley<\/span><\/li>\n<li><span class=\"quantity\">6<\/span><span class=\"ingredient-name\">TBS unsalted butter<\/span><\/li>\n<li><span class=\"quantity\">4<\/span><span class=\"ingredient-name\">(8 oz) boneless, skinless chicken breast halves, pounded to \u00bc-inch thickness<\/span><\/li>\n<li><span class=\"id-ingredient-name\">salt and pepper to taste<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">cup AP flour<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">tsp salt<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">eggs, beaten<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">cups panko bread crumbs<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">pinch cayenne pepper<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">cups vegetable oil for frying, or as needed<\/span><\/li>\n<\/ul>\n<p><strong>Potatoes:<\/strong><\/p>\n<ul>\n<li><span class=\"quantity\">12<\/span><span class=\"ingredient-name\">oz potatoes<\/span><\/li>\n<li><span class=\"id-ingredient-name\">olive oil<\/span><\/li>\n<\/ul>\n<p><strong>Roast Vegetable Medley:<\/strong> (Substitute any vegetables as desired)<\/p>\n<ul>\n<li><span class=\"quantity\">4<\/span><span class=\"ingredient-name\">oz red onion<\/span><\/li>\n<li><span class=\"quantity\">4<\/span><span class=\"ingredient-name\">oz green beans<\/span><\/li>\n<li><span class=\"quantity\">4<\/span><span class=\"ingredient-name\">oz carrots<\/span><\/li>\n<\/ul>\n<p><strong class=\"Body\"><br \/>Build Kievs:<br \/><\/strong><\/p>\n<p>Grind <strong>garlic<\/strong> and a pinch of <strong>salt<\/strong> together in a mortar and pestle until <strong>garlic<\/strong> is completely smashed. Add <strong>parsley<\/strong> and mix until completelyincorporated. Pound <strong>butter<\/strong> into <strong>garlic mixture<\/strong> with pestle until <strong>parsley<\/strong> and <strong>garlic<\/strong> are fully incorporated into the <strong>butter.<\/strong> Wrap the <strong>butter<\/strong> mixture in plastic wrap and refrigerate until cold, at least 15 minutes.<\/p>\n<p>Season <strong>chicken breasts<\/strong> with <strong>salt<\/strong> and <strong>pepper.<\/strong> Place \u00bc the <strong>butter<\/strong> mixture in the center of wider end of each <strong>chicken breast.<\/strong> Fold the narrower end of each <strong>chicken breast<\/strong> up over the <strong>butter<\/strong> to form a tight pocket around the <strong>butter.<\/strong> Gather the sides of each <strong>chicken breast<\/strong> to the center to form a round ball. The top of the <strong>chicken<\/strong> will be smooth, and the bottom will be gathered. Tightly wrap each <strong>chicken breast ball<\/strong> in plastic wrap, put <strong>wrapped breasts<\/strong> on a plate, and chill in the freezer until the gathered bottoms hold together and are slightly firm, about 30 minutes.<\/p>\n<p><strong>Prep vegetable medley:<\/strong><\/p>\n<p class=\"Body\">Adjust rack to top and middle positions and preheat oven to 425\u00b0F. Wash and dry produce.<\/p>\n<p>Trim <strong>beans,<\/strong> peel and cut <strong>carrots<\/strong> into \u00bd-inch thick diagonal pieces, peel, halve and slice <strong>red onion<\/strong> into \u00bd-inch wedges.<\/p>\n<p>Add <strong>carrots, beans<\/strong> and <strong>red onion<\/strong> to sheet pan with a large drizzle of <strong>oil, salt,<\/strong> and <strong>pepper.<\/strong><\/p>\n<p>Roast on top rack for 22 minutes.<\/p>\n<p><strong>Cook Potatoes:<\/strong><\/p>\n<p>Peel, if desired, and chop <strong>potatoes<\/strong> into 1\/2-inch pieces. Add <strong>potatoes<\/strong> to medium saucepan and fill with <strong>water<\/strong> to cover by 1 inch, add 1 tsp <strong>salt.<\/strong> Bring to a boil, partially cover and reduce heat to a soft boil. Cook for 15-20 minutes until fork tender. Reserve 1\/2-cup <strong>potato cooking <\/strong><strong>liquid<\/strong> and drain.<\/p>\n<p><strong>Cook Kievs:<\/strong><\/p>\n<p>Whisk <strong>flour<\/strong> and 2 tsp <strong>salt<\/strong> together in a shallow bowl. Whisk <strong>eggs<\/strong> together in another shallow bowl. Pour <strong>panko breadcrumbs<\/strong> into another bowl.<\/p>\n<p>Remove <strong>chicken breast<\/strong> balls from plastic wrap. Gently press each <strong>chicken breast ball<\/strong> into <strong>flour<\/strong> mixture to coat and shake off any excess <strong>flour.<\/strong> Dip into <strong>beaten eggs,<\/strong> then press into <strong>breadcrumbs.<\/strong> Place <strong>breaded chicken<\/strong> onto a plate, cover with plastic wrap, and return to the freezer to chill until firm, about 15 minutes.<\/p>\n<p>Heat <strong>oil<\/strong> in a large saucepan to 350\u00b0F. Preheat oven to 400\u00b0F. Line a baking sheet with aluminum foil.<\/p>\n<p>Working in batches, cook <strong>chicken,<\/strong> gathered side down, in hot <strong>oil<\/strong> and until lightly golden on both sides, about 1 minute per side. Transfer to prepared baking sheet. Sprinkle <strong>salt<\/strong> and <strong>cayenne pepper<\/strong> over the top.<\/p>\n<p>Bake in the preheated oven until you can hear the <strong>butter<\/strong> start to sizzle on the baking sheet, 15 to 17 minutes. An instant-read thermometer inserted into the center should read at least 165\u00b0F. Let rest for 5 minutes before serving.<\/p>\n<p><strong>Mash potatoes:<\/strong><\/p>\n<p class=\"Body\">Return pot with drained <strong>potatoes<\/strong> to medium-low heat. Add 1 1\/2 TBS <strong>sour cream<\/strong> and 1 TBS <strong>butter.<\/strong> Mash until smooth, adding splashes of reserved <strong>potato cooking liquid<\/strong> as needed.
