Most would call this vegetable beef soup. It is unthickened which in current terms that makes it a soup not a stew. We always called it Beef Stew.<\/p>\n<ul>\n<li><span class=\"quantity\">1\u00bd<\/span><span class=\"ingredient-name\">lb beef chuck, round, or stew meat<\/span><\/li>\n<li><span class=\"id-ingredient-name\">salt and pepper<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">cup flour (optional)<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">TBS vegetable oil<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">lb potatoes, peeled and cut into bite size chunks<\/span><\/li>\n<li><span class=\"quantity\">4<\/span><span class=\"ingredient-name\">large carrots, peeled and cut into 1 inch lengths<\/span><\/li>\n<li><span class=\"quantity\">4<\/span><span class=\"ingredient-name\">stalks celery, cut into \u00bd to \u00be inch pieces<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">onion, peeled and chopped<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">29 oz can Veg-All, substitute 1 lb frozen mixed veg.<\/span><\/li>\n<li><span class=\"quantity\">8<\/span><span class=\"ingredient-name\">cups beef stock<\/span><\/li>\n<\/ul>\n<p>Cut the <strong>beef<\/strong> into 1 to 2 inch pieces. Season the <strong>beef<\/strong> with <strong>salt<\/strong> and <strong>pepper<\/strong> and dredge in <strong>flour.<\/strong><\/p>\n<p>In a Dutch oven or soup pot, heat the <strong>oil<\/strong> over medium high heat. Brown the <strong>beef<\/strong> well, turning to brown all sides.<\/p>\n<p>Add <strong>vegetables,<\/strong> <strong>Veg-All<\/strong> and <strong>stock.<\/strong> Stir, bring to boil and reduce to simmer. Cook partially covered for 90 mins to 2 hours.
