Serve it on its own or with a salad, and dinner is done.<br \/>\nThere is some version of chicken and rice in almost every culture. Some are more finicky than others, requiring special ingredients or equipment. To be honest, I\u2019ve never had a version of chicken and rice that I didn\u2019t like, but the goal of this version is to keep some of those classic flavors, but also make it approachable on a weeknight!<\/p>\n<ul>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">lb boneless skinless chicken breast, cut into slices \u00bd-inch thick and 2-3 inches long<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">TBS olive oil<\/span><\/li>\n<li><span class=\"quantity\">\u00bc<\/span><span class=\"ingredient-name\">tsp salt<\/span><\/li>\n<li><span class=\"quantity\">\u00bc<\/span><span class=\"ingredient-name\">tsp black pepper<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">small yellow onion, diced<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">cloves garlic, minced<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp dried oregano<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp dried basil<\/span><\/li>\n<li><span class=\"quantity\">1\u00bd<\/span><span class=\"ingredient-name\">cups long-grain white rice, rinsed well<\/span><\/li>\n<li><span class=\"quantity\">3-4<\/span><span class=\"ingredient-name\">cups chicken stock<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">cup frozen sweet peas<\/span><\/li>\n<li><span class=\"id-ingredient-name\">Fresh parsley, garnish<\/span><\/li>\n<\/ul>\n<p><strong><br \/>\nCook the chicken:<\/strong> Season your sliced <strong>chicken<\/strong> with <strong>salt<\/strong> and <strong>pepper.<\/strong> Heat the <strong>olive oil<\/strong> in a large (at least 12-inch) skillet over medium-high heat. Add the <strong>chicken<\/strong> and cook for 2 to 3 minutes per side, getting a decent sear on both sides. It\u2019s okay at this point if your chicken isn\u2019t cooked all the way through.<\/p>\n<p><strong>Cook the onions:<\/strong> Remove <strong>chicken<\/strong> from the skillet and add <strong>onions<\/strong> and <strong>garlic.<\/strong> Cook for 2-3 minutes, softening <strong>veggies.<\/strong> Add dried <strong>oregano<\/strong> and <strong>basil<\/strong> to the skillet and stir together.<\/p>\n<p><strong>Assemble the skillet and simmer:<\/strong> Stir in the rinsed <strong>white rice<\/strong> and nestle <strong>chicken<\/strong> pieces back in the skillet. Then add 3 cups of the <strong>chicken stock<\/strong> and stir gently to make sure <strong>chicken stock<\/strong> is evenly distributed. Bring to a simmer, turn heat down to low, cover, and cook for 15 minutes.<\/p>\n<p><strong>Check the rice:<\/strong> After 15 minutes, check the skillet. If the <strong>rice<\/strong> is tender and the skillet is dry, then the dish is ready to serve. If the <strong>rice<\/strong> isn\u2019t quite done and the skillet is dry, add another 1\/2 cup of <strong>broth,<\/strong> re-cover the skillet, and continue to simmer for a few minutes. If the <strong>rice<\/strong> is cooked but there is still some stock in the skillet, uncover the pan and let the extra <strong>stock<\/strong> cook off for a few minutes.<\/p>\n<p>When the <strong>rice<\/strong> seems just about done, add the <strong>frozen peas<\/strong> to the skillet. They will thaw quickly!<\/p>\n<p>Serve!
