Toasting provides an extra layer of savory flavor<\/p>\n<ul>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">sweet potato<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">5 oz pork tenderloin pieces, silver skin removed<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">scallions<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">cloves garlic<\/span><\/li>\n<\/ul>\n<p><strong>For bold &amp; savory steak spice:<\/strong><\/p>\n<ul>\n<li><span class=\"quantity\">\u00bc<\/span><span class=\"ingredient-name\">tsp red chili flake <\/span><\/li>\n<li><span class=\"quantity\">\u00bc<\/span><span class=\"ingredient-name\">tsp crushed coriander seed <\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">tsp crushed dill seed <\/span><\/li>\n<li><span class=\"quantity\">\u00be<\/span><span class=\"ingredient-name\">tsp crushed mustard seed <\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp dried minced garlic <\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp crushed black pepper<\/span><\/li>\n<\/ul>\n<p><strong>For couscous:<\/strong><\/p>\n<ul>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">TBS butter<\/span><\/li>\n<li><span class=\"quantity\">1\u00bd<\/span><span class=\"ingredient-name\">cup Israeli couscous<\/span><\/li>\n<li><span class=\"id-ingredient-name\">scallion whites<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">clove garlic, minced<\/span><\/li>\n<li><span class=\"quantity\">1\u00bc<\/span><span class=\"ingredient-name\">cups water<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">heaping tsp mushroom (or chicken) stock concentrate<\/span><\/li>\n<li><span class=\"id-ingredient-name\">big pinch salt<\/span><\/li>\n<\/ul>\n<p><strong>For sauce:<\/strong><\/p>\n<ul>\n<li><span class=\"id-ingredient-name\">drizzle of oil<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">clove garlic, minced<\/span><\/li>\n<li><span class=\"quantity\">1\/3<\/span><span class=\"ingredient-name\">cup water<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp Better Than Bouillon, chicken <\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp Better Than Bouillon, beef <\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">TBS cream cheese<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">TBS butter<\/span><\/li>\n<\/ul>\n<p><strong>Prep:<\/strong><\/p>\n<p>Adjust rack to top position and preheat oven to 450\u00b0F.<\/p>\n<p>Wash and dry produce.<\/p>\n<p>Dice sweet potato into \u00bd-inch pieces.<\/p>\n<p>Trim and thinly slice scallions, separating whites from greens.<\/p>\n<p>Peel and mince or grate garlic.<\/p>\n<p><strong>Roast sweet potato:<\/strong><\/p>\n<p>Toss sweet potato on one side of a baking sheet with a drizzle of oil, salt, and pepper.<\/p>\n<p>Roast on top rack 11 minutes (you\u2019ll add more to the sheet then).<\/p>\n<p><strong>Sear pork:<\/strong><\/p>\n<p>While sweet potato roasts, using a rolling pin or heavy-bottomed pan, crush peppercorns inside packet of Steak Spice.<\/p>\n<p>Pat pork dry with paper towels and season all over with 1\u00bd tsp Steak Spice, a big pinch of salt, and pepper.<\/p>\n<p>Heat a drizzle of oil in a large pan over medium heat.<\/p>\n<p>Add pork and sear, turning occasionally, until browned all over, 4-8 minutes.<\/p>\n<p>Turn off heat, transfer to a plate.<\/p>\n<p>Wipe out pan.<\/p>\n<p><strong>Roast pork:<\/strong><\/p>\n<p>Once sweet potato has roasted 11 minutes, remove sheet pan from oven.<\/p>\n<p>Carefully toss sweet potato, add pork to empty side of baking sheet.<\/p>\n<p>Return to top rack until pork is cooked through and sweet potato is browned and<\/p>\n<p>tender, 9-11 minutes.<\/p>\n<p>Transfer pork to a cutting board to rest for at least 5 minutes.<\/p>\n<p><strong>Cook couscous:<\/strong><\/p>\n<p>Meanwhile, melt 2 TBS butter in a medium pot over medium high heat.<\/p>\n<p>Add scallion whites and half the garlic (you\u2019ll use the rest in the next step).<\/p>\n<p>Cook until fragrant, 30 seconds.<\/p>\n<p>Add couscous and stir to coat.<\/p>\n<p>Stir in \u00be (1\u00bd) cups water, 1 tsp chicken stock concentrate, and a big pinch of salt.<\/p>\n<p>Bring to a boil, then cover and reduce to a low simmer.<\/p>\n<p>Cook until couscous is tender, 6-8 minutes.<\/p>\n<p>Drain any excess liquid if necessary.<\/p>\n<p>Season with salt and pepper if desired.<\/p>\n<p>Keep covered off heat until ready to serve.<\/p>\n<p>Make sauce:<\/p>\n<p>While couscous cooks, heat a drizzle of oil in pan used for pork over medium heat.<\/p>\n<p>Add remaining garlic and cook, stirring often, until fragrant, 30 seconds.<\/p>\n<p>Add \u00bc (1\/3) cup water, 1 tsp BTB beef and 1 tsp BTB chicken, and cream cheese.<\/p>\n<p>Cook, stirring occasionally, until cream cheese melts and sauce has thickened, 2-3 minutes.<\/p>\n<p>Remove from heat and stir in 2 TBS butter.<\/p>\n<p>Taste and season with salt and pepper if desired.<\/p>\n<p><strong>Finish &amp;
