Grilled, broiled or grill pan. Serve these with your favorite Mediterranean salads and sides and a little Tahini sauce or Tzatziki and some pita or naan.<br \/>\nPrep: 30-40 Time: Broiled: 20<br \/>\nNote: If you don&#8217;t like spicy, just use sweet paprika in the marinade.<br \/>\nFor the latest batch I did skewerless under the broiler. Came out great, well worth the time and effort. FWIW, I was out of coriander and skipped the cumin.<\/p>\n<ul>\n<li><span class=\"quantity\">1\u00bd<\/span><span class=\"ingredient-name\">lb salmon fillet, cut into 1-inch to 2-inch cubes<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">zucchini, sliced into rounds<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">small red onion, cut into squares\/chunks<\/span><\/li>\n<li><span class=\"id-ingredient-name\">optional: green pepper, cut into chunks.<\/span><\/li>\n<li><span class=\"id-ingredient-name\">optional: mushrooms, quartered if large.<\/span><\/li>\n<li><span class=\"id-ingredient-name\">Kosher salt and pepper<\/span><\/li>\n<\/ul>\n<p><strong>For marinade:<\/strong><\/p>\n<ul>\n<li><span class=\"quantity\">\u00bc-\u2153<\/span><span class=\"ingredient-name\">cup olive oil<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">lemon, zested and juiced<\/span><\/li>\n<li><span class=\"quantity\">3<\/span><span class=\"ingredient-name\">garlic cloves, minced<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">tsp chopped fresh thyme leaves<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">tsp dry oregano<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp ground cumin<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp mild <strong><span style=\"color: #ff0000;\">Aleppo chili pepper<\/span><\/strong> (substitute: 1 tsp sweet paprika and a healthy pinch of cayenne)<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">tsp ground coriander<\/span><\/li>\n<\/ul>\n<p><strong><br \/>\nMarinate salmon:<\/strong><\/p>\n<p>In a small bowl, whisk together the <strong>marinade<\/strong> ingredients of <strong>extra virgin olive oil, lemon juice<\/strong> and <strong>zest, garlic, oregano, thyme, cumin, <span style=\"color: #ff0000;\">Aleppo pepper<\/span><\/strong> and <strong>coriander.<\/strong><\/p>\n<p>Place <strong>salmon pieces, zucchini<\/strong> and <strong>onions<\/strong> in a large mixing bowl. Season with <strong>salt<\/strong> and <strong>pepper<\/strong> and toss briefly. Now pour the <strong>marinade<\/strong> over the <strong>salmon<\/strong> and toss again to make sure the <strong>salmon<\/strong> is well coated with the <strong>marinade.<\/strong> Let the fish <strong>marinate<\/strong> for about 15 to 20 minutes (see Cook&#8217;s Tip)<\/p>\n<p><strong>Build skewers:<\/strong><\/p>\n<p>Note: Skip the skewers for indoor cooking. Just broil (see below) or saut\u00e9 in a large heavy skillet.<\/p>\n<p>Beginning with <strong>salmon,<\/strong> thread <strong>salmon, zucchini<\/strong> and <strong>onions<\/strong> through <strong>skewers<\/strong> (if using wooden skewers, be sure to have soaked them for 30 minutes before using.)<\/p>\n<p>Heat an outdoor grill (indoor grilling instructions in notes). Arrange <strong>salmon skewers<\/strong> on top and cover the grill. Grill <strong>salmon kabobs<\/strong> for 6 to 8 minutes, covered, or until the fish is opaque throughout, turning once midway through cooking (using tongs is the best way to turn the <strong>salmon<\/strong> skewers)<\/p>\n<p><strong>Cook&#8217;s tips:<\/strong><\/p>\n<p>The <strong>marinade<\/strong> packs the <strong>salmon<\/strong> with tons of flavor and acts as a <strong>brine<\/strong> to help keep it from drying out. If you want to give the <strong>salmon<\/strong> a little more time in the marinade for even more flavor, cover and refrigerate for one hour or so before grilling.<\/p>\n<p><strong>Indoor grilling instructions:<\/strong> brush a griddle or grill pan with a little bit of <strong>olive oil<\/strong> and heat on medium. Arrange the <strong>salmon kabobs<\/strong> in one layer (do this in batches if needed and do not crowd the <strong>kabobs).<\/strong> Cook for 3 to 5 minutes on side, turn over once and cook for another 4 minutes or so. If you like, you can cover them for even cooking.<\/p>\n<p><strong>Broiling instructions:<\/strong> Heat oven broiler. Line a quarter or half sheet pan with foil or Silpat for ease of cleaning. Add a baking rack to the pan and spray with <strong>cooking spray<\/strong>. Arrange <strong>salmon skewers<\/strong> on top of the baking rack and place about 5 to 6 inches below broiler. Cook on one side for 4 to 5 minutes, turn over and cook another 4 minute or so or until <strong>fish<\/strong> is opaque throughout.<\/p>\n<p><strong>Skewerless Broiling instructions:<\/strong> Heat oven broiler.
