Bring to a boil and cook until just tender.<\/p>\n<p>In the covered pan, saut\u00e9 <strong>kielbasa<\/strong> and <strong>onion<\/strong> in <strong>oil<\/strong> until <strong>onion<\/strong> is tender. Add <strong>potatoes;<\/strong> saut\u00e9 3-5 minutes longer or until <strong>kielbasa<\/strong> and <strong>potatoes<\/strong> are lightly browned.<\/p>\n<p>Combine the <strong>brown sugar, vinegar, mustard, thyme<\/strong> and <strong>pepper;<\/strong> stir into skillet. Bring to a boil. Reduce heat; simmer, uncovered, for 2-3 minutes or until heated through. Add <strong>spinach<\/strong> and <strong>bacon;<\/strong> cover, cook until <strong>spinach<\/strong> is wilted.
