{"id":4654,"date":"2020-11-27T17:59:21","date_gmt":"2020-11-27T17:59:21","guid":{"rendered":"http:\/\/nowellfamily.org\/cookbook\/?p=4654"},"modified":"2021-11-25T17:57:42","modified_gmt":"2021-11-25T17:57:42","slug":"mashed-potatoes","status":"publish","type":"post","link":"https:\/\/nowellfamily.org\/cookbook\/2020\/11\/27\/mashed-potatoes\/","title":{"rendered":"Mashed Potatoes"},"content":{"rendered":"<h5 style=\"text-align: center;\">Yield: 2 to 10 Servings<\/h5>\n<h6 style=\"text-align: center;\">Scott Nowell<\/h6>\n<p>For a Thanksgiving or any other table hit.\u00a0 Note: 1\/2 lb of potatoes is usually considered one serving.<\/p>\n<ul>\n<li><span class=\"quantity\">1-5<\/span><span class=\"ingredient-name\">lb Yukon Gold or Russet potatoes, peeled, cut into 1\u201d pieces<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp kosher salt per lb of potatoes<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">TBS butter per lb of potatoes<\/span><\/li>\n<li><span class=\"id-ingredient-name\">whole milk and heavy cream, (total of 1\/3 cup per lb of potatoes<\/span><\/li>\n<li><span class=\"id-ingredient-name\">salt and freshly ground black pepper<\/span><\/li>\n<\/ul>\n<p>Place potatoes in a large pot and pour in cold water to cover by 1\u201d. Add salt and bring to a boil. Reduce heat and boil gently until potatoes are tender, 15\u201330 minutes. Drain and return to low heat to cook off any remaining water.<\/p>\n<p><strong>Optional:<\/strong> Pass hot potatoes through a ricer into a large bowl (if allowed to cool, the potatoes will become gummy).<\/p>\n<p>Add 2 TBS butter per pound of potatoes. Let melt and mash.<\/p>\n<p>Add 1\/3 cup milk or mix of milk and cream per pound of potatoes.<\/p>\n<p>Mash to desired consistency. Add more milk or cream if necessary.<\/p>\n<p>Taste and season with salt and pepper.<\/p>\n<p><strong>Do ahead:<\/strong>\u00a0Potatoes can be made 4 hours ahead. Pass through ricer into a large pot and cover.
