Hey, there not burnt, just dark!<\/p>\n<p><strong>Chicken &amp; Marinade:<\/strong><\/p>\n<ul>\n<li><span class=\"quantity\">4<\/span><span class=\"ingredient-name\">bone-in, skin-on chicken thighs<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">cup balsamic vinegar<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">TBS honey<\/span><\/li>\n<li><span class=\"quantity\">1\u00bd<\/span><span class=\"ingredient-name\">TBS whole-grain mustard<\/span><\/li>\n<li><span class=\"quantity\">3<\/span><span class=\"ingredient-name\">cloves garlic, minced<\/span><\/li>\n<li><span class=\"id-ingredient-name\">Kosher salt<\/span><\/li>\n<li><span class=\"id-ingredient-name\">freshly ground black pepper <\/span><\/li>\n<\/ul>\n<p><strong>Potatoes:<\/strong><\/p>\n<ul>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">cup baby red potatoes, halved (quartered if large)<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">TBS sprigs fresh rosemary, plus 1 TBS chopped<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">TBS extra-virgin olive oil, divided<\/span><\/li>\n<\/ul>\n<p><strong>Marinate chicken:<\/strong> In a large bowl, combine balsamic vinegar, honey, mustard, and garlic and season with salt and pepper. Whisk until combined. Add chicken thighs and toss until fully coated. Transfer to the fridge to marinate, at least 20 minutes and up to 1 hour.<\/p>\n<p>Preheat oven to 425\u00b0F.<\/p>\n<p><strong>Prepare potatoes:<\/strong> In a medium bowl, add potatoes and chopped rosemary and season with salt and pepper. Add 1 TBS oil and toss until combined. Set aside.<\/p>\n<p><strong>Brown chicken:<\/strong> In a large ovenproof skillet over medium-high heat, heat remaining TBS oil. Add chicken and sear, skin side down, 2 minutes, <strong>&#8211; be careful, the marinade contains honey which will burn if left too long<\/strong>, then flip and sear 2 minutes more. Add potatoes, nestling them between chicken, and top with rosemary sprigs.<\/p>\n<p><strong>Roast:<\/strong> Transfer to the oven and bake until potatoes are tender, and chicken is cooked through, 20 minutes.
