{"id":5102,"date":"2020-12-20T19:26:59","date_gmt":"2020-12-20T19:26:59","guid":{"rendered":"http:\/\/nowellfamily.org\/cookbook\/?p=5102"},"modified":"2020-12-20T19:26:59","modified_gmt":"2020-12-20T19:26:59","slug":"cioppino","status":"publish","type":"post","link":"https:\/\/nowellfamily.org\/cookbook\/2020\/12\/20\/cioppino\/","title":{"rendered":"Cioppino"},"content":{"rendered":"<h5 style=\"text-align: center;\">Yield: 6 servings<\/h5>\n<h6 style=\"text-align: center;\">Adapted from <a href=\"https:\/\/www.youtube.com\/watch?v=jCjEQrZGan8\">Giada De Laurentiis \/ Food Network<\/a><\/h6>\n<h6 style=\"text-align: center;\"><\/h6>\n<p><strong>Broth:<\/strong><\/p>\n<ul>\n<li><span class=\"quantity\">3<\/span><span class=\"ingredient-name\">TBS olive oil<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">large fennel bulb, thinly sliced<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">onion, chopped<\/span><\/li>\n<li><span class=\"quantity\">3<\/span><span class=\"ingredient-name\">large shallots, chopped<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">tsp salt<\/span><\/li>\n<li><span class=\"quantity\">4<\/span><span class=\"ingredient-name\">large garlic cloves, finely chopped<\/span><\/li>\n<li><span class=\"quantity\">\u00be<\/span><span class=\"ingredient-name\">tsp dried crushed red pepper flakes, plus more to taste<\/span><\/li>\n<li><span class=\"quantity\">\u00bc<\/span><span class=\"ingredient-name\">cup tomato paste<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">(28-oz) can diced tomatoes in juice<\/span><\/li>\n<li><span class=\"quantity\">1\u00bd<\/span><span class=\"ingredient-name\">cups dry white wine<\/span><\/li>\n<li><span class=\"quantity\">5<\/span><span class=\"ingredient-name\">cups fish stock<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">bay leaf<\/span><\/li>\n<\/ul>\n<p><strong>Seafood:<\/strong><\/p>\n<ul>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">lb manila clams, scrubbed<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">lb mussels, scrubbed, de-bearded<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">lb uncooked large shrimp, peeled and de-veined<\/span><\/li>\n<li><span class=\"quantity\">1\u00bd<\/span><span class=\"ingredient-name\">lb assorted firm-fleshed fish fillets such as halibut or salmon, cut into 2-inch chunks<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">lb calamari, cleaned<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">lb sea scallops, abductor removed<\/span><\/li>\n<\/ul>\n<p><strong>Broth:<\/strong> Heat the oil in a very large pot over medium heat.<\/p>\n<p>Add the fennel, onion, shallots, and salt and saut\u00e9 until the onion is translucent, about 10 minutes.<\/p>\n<p>Add the garlic and \u00be tsp of red pepper flakes, and saut\u00e9 2 minutes.<\/p>\n<p>Stir in the tomato paste. Add tomatoes with their juices, wine, fish stock and bay leaf. Cover and bring to a simmer. Reduce the heat to medium-low. Cover and simmer until the flavors blend, about 30 minutes.<\/p>\n<p><strong>Seafood:<\/strong> Add the clams and mussels to the cooking liquid. Cover and cook until the clams and mussels begin to open, about 5 minutes.<\/p>\n<p>Add the calamari, scallops, shrimp and fish. Simmer gently until the fish and shrimp are just cooked through, and the clams are completely open, stirring gently, about 5 minutes longer (discard any clams and mussels that do not open).
