Wash and dry produce. Trim, peel, and cut <strong>carrots<\/strong> on a diagonal into 1-inch-thick pieces. Trim and thinly slice <strong>mushrooms.<\/strong> Trim and thinly slice <strong>scallions,<\/strong> separating <strong>whites<\/strong> from <strong>greens.<\/strong><\/p>\n<p><strong>Cook carrots &amp; potatoes:<\/strong><\/p>\n<p>Toss <strong>carrots<\/strong> on a baking sheet with a drizzle of <strong>oil, salt,<\/strong> and <strong>pepper.<\/strong> Roast on top rack until tender, 25-30 minutes. Meanwhile, dice <strong>potatoes<\/strong> into \u00bd-inch pieces (peel first for a smoother texture). Place in a large pot with enough <strong>salted water<\/strong> to cover by 2 inches. Bring to a boil and cook until tender, 15-20 minutes. Reserve \u00bd cup <strong>potato cooking liquid,<\/strong> then drain and return <strong>potatoes<\/strong> to pot. Keep covered off heat until ready to <strong>mash.<\/strong> Swap in <strong>asparagus<\/strong> for <strong>carrots;<\/strong> roast on middle rack, 10-12 minutes.<\/p>\n<p><strong>Cook chicken:<\/strong><\/p>\n<p>While <strong>potatoes<\/strong> cook, pat <strong>chicken<\/strong> dry with paper towels and season all over with <strong>salt<\/strong> and <strong>pepper.<\/strong> Heat a drizzle of <strong>oil<\/strong> in a large pan over medium-high heat. Add <strong>chicken<\/strong> and cook until browned and cooked through, 3- to 5-minutes per side. Transfer to a plate.<\/p>\n<p><strong>Mash potatoes:<\/strong><\/p>\n<p>Heat pot with drained <strong>potatoes<\/strong> over low heat; add half the <strong>sour cream<\/strong> and 1 TBS <strong>butter.<\/strong> Mash <strong>potatoes<\/strong> until smooth and creamy, adding splashes of <strong>reserved potato cooking liquid<\/strong> as needed. Season with <strong>salt<\/strong> and <strong>pepper.<\/strong><\/p>\n<p><strong>Make sauce:<\/strong><\/p>\n<p>Heat a drizzle of <strong>oil<\/strong> in pan used for chicken over medium-high heat. Add <strong>mushrooms<\/strong> and <strong>scallion whites,<\/strong> season with <strong>salt<\/strong> and <strong>pepper.<\/strong> Cook, stirring, until softened, 2- to 4-minutes. Stir in <strong>stock concentrate<\/strong> and \u00bc cup <strong>water.<\/strong> Bring to a boil, then reduce to a low simmer. Cook until slightly thickened, 1- to 2-minutes. Evenly top <strong>chicken<\/strong> with <strong>Monterey Jack.<\/strong> Cover pan until cheese melts, 1- to 2-minutes. Divide <strong>chicken, carrots,<\/strong> and <strong>mashed potatoes<\/strong> between plates.
