Bring a large pot of <strong>salted water<\/strong> to a boil. Wash and dry produce.<\/p>\n<p>Finely dice <strong>tomato.<\/strong> Pick <strong>parsley<\/strong> leaves from stems, finely chop <strong>leaves.<\/strong> Peel and mince <strong>garlic.<\/strong><\/p>\n<p><strong>Cook chicken: <\/strong><\/p>\n<p>Pat <strong>chicken<\/strong> dry with paper towels. Season with 1\u00bd tsp <strong>Italian Seasoning, salt,<\/strong> and <strong>pepper.<\/strong><\/p>\n<p>Heat a drizzle of <strong>oil<\/strong> in a medium pan over medium-high heat. Add <strong>chicken<\/strong> and cook until browned, 2- to 3-minutes per side.<\/p>\n<p>Transfer <strong>chicken<\/strong> to a baking sheet. Top with half the <strong>mozzarella<\/strong>.<\/p>\n<p>Roast on top rack until <strong>chicken<\/strong> is cooked through and <strong>cheese<\/strong> melts, 9-11 minutes.<\/p>\n<p><strong>Cook pasta: <\/strong><\/p>\n<p>Once <strong>water<\/strong> is boiling, add <strong>spaghetti<\/strong> to pot. Cook, stirring occasionally, until al dente, 9-11 minutes.<\/p>\n<p>Reserve \u00bd cup <strong>pasta cooking water<\/strong>, then drain. Keep empty pot handy.<\/p>\n<p><strong>Make balsamic tomato: <\/strong><\/p>\n<p>While <strong>pasta<\/strong> cooks, heat a drizzle of <strong>oil<\/strong> in pan used for <strong>chicken<\/strong> over medium high heat. Add <strong>tomato<\/strong> and 1\u00bd tsp <strong>Italian Seasoning.<\/strong> Cook, stirring, until slightly softened, 1- to 2-minutes.<\/p>\n<p>Stir in <strong>balsamic vinegar<\/strong> and \u00bc tsp <strong>sugar.<\/strong> Simmer until mixture is slightly thickened, 1 minute.<\/p>\n<p><strong>Note:<\/strong> The <strong>sugar<\/strong> balance out the acidity of the <strong>tomato mixture.<\/strong><\/p>\n<p>Remove pan from heat and stir in 1 TBS <strong>butter<\/strong> until melted. Stir in chopped <strong>parsley,<\/strong> season with <strong>salt<\/strong> and <strong>pepper.<\/strong> Turn off heat.<\/p>\n<p><strong>Toss pasta: <\/strong><\/p>\n<p>Melt 2 TBS <strong>butter<\/strong> in pot used for <strong>pasta<\/strong> over low heat.
