On the side, there\u2019s seasoned potato wedges and crispy-edged roasted carrots.<br \/>Prep: 10 Cook: 35<\/p>\n<ul>\n<li><span class=\"quantity\">12<\/span><span class=\"ingredient-name\">oz potatoes<\/span><\/li>\n<li><span class=\"quantity\">14<\/span><span class=\"ingredient-name\">cup panko breadcrumbs<\/span><\/li>\n<li><span class=\"quantity\">10<\/span><span class=\"ingredient-name\">oz chicken cutlets<\/span><\/li>\n<li><span class=\"quantity\">12<\/span><span class=\"ingredient-name\">oz carrots <\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">TBS fry seasoning (recipe follows)<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">TBS maple syrup <\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">TBS Dijon mustard<\/span><\/li>\n<li><span class=\"id-ingredient-name\">salt &amp; pepper<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">TBS olive oil<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">TBS butter<\/span><\/li>\n<\/ul>\n<p><strong>Prep: <\/strong><\/p>\n<p>Adjust racks to middle and top positions and preheat oven to 425\u00b0F. Wash and dry <strong>produce.<\/strong><\/p>\n<p>Cut <strong>potatoes<\/strong> into \u00bd-inch-thick wedges. Trim, peel, and cut <strong>carrots<\/strong> on a diagonal into \u00bd-inch-thick pieces.<\/p>\n<p><strong>Season panko: <\/strong><\/p>\n<p>Place 1 TBS <strong>butter<\/strong> in a small microwave-safe bowl, microwave until just melted, 30 seconds.<\/p>\n<p>Stir in half the <strong>Fry Seasoning<\/strong> (you\u2019ll use the rest later), a big pinch of <strong>salt,<\/strong> and <strong>pepper.<\/strong> Add <strong>panko<\/strong> and stir until evenly combined.<\/p>\n<p><strong>Make maple mustard: <\/strong><\/p>\n<p>Place 1 TBS <strong>butter<\/strong> in a second small microwave-safe bowl, microwave until just melted, 30 seconds. Add <strong>maple syrup, mustard,<\/strong> and a pinch of <strong>salt,<\/strong> stir until smooth.<\/p>\n<p>Reserve 1 TBS of the mixture for brushing onto <strong>chicken<\/strong> in step 5.<\/p>\n<p><strong>Season veggies: <\/strong><\/p>\n<p>Toss <strong>potatoes<\/strong> on a baking sheet with a large drizzle of <strong>olive oil,<\/strong> remaining <strong>Fry Seasoning, salt,<\/strong> and <strong>pepper.<\/strong><\/p>\n<p>On a separate baking sheet, toss <strong>carrots<\/strong> with a drizzle of <strong>olive oil, salt,<\/strong> and <strong>pepper.<\/strong> Push <strong>carrots<\/strong> to one side of sheet. Swap in <strong>asparagus<\/strong> for <strong>potatoes.<\/strong><\/p>\n<p><strong>Coat chicken: <\/strong><\/p>\n<p>Pat <strong>chicken<\/strong> dry with paper towels, season all over with <strong>salt<\/strong> and <strong>pepper.<\/strong><\/p>\n<p>Place on opposite side of baking sheet from <strong>carrots.<\/strong> Evenly spread reserved <strong>maple mustard<\/strong> onto tops of <strong>chicken,<\/strong> then mound <strong>seasoned panko<\/strong> on top, pressing to adhere (no need to coat the undersides).<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignnone size-medium wp-image-51559\" src=\"https:\/\/i0.wp.com\/nowellfamily.org\/cookbook\/wp-content\/uploads\/sites\/4\/2023\/04\/CrispyMapleMustardChickenServe-300x171.jpg?resize=300%2C171\" alt=\"\" width=\"300\" height=\"171\" \/><\/p>\n<p><strong>Finish &amp; serve: <\/strong><\/p>\n<p>Transfer <strong>chicken<\/strong> and <strong>carrots<\/strong> to middle rack and <strong>potatoes<\/strong> to top rack.<\/p>\n<p>Roast until <strong>chicken<\/strong> is golden-brown and cooked through and <strong>veggies<\/strong> are tender, 15-18 minutes.<\/p>\n<p><strong>Tip:<\/strong> If <strong>chicken<\/strong> is done before <strong>veggies,<\/strong> remove from sheet and continue roasting <strong>veggies<\/strong> until browned and tender, 5- to 7-minutes more.<\/p>\n<p>Divide <strong>chicken, potato wedges,<\/strong> and <strong>carrots<\/strong> between plates.
